Our North Alabama weather is quite unpredictable lately! When our external world is rapidly changing, our internal world craves our awareness and attention. It cries out for balance from the inside out. We must LISTEN to our bodies & minds. Winter offers the gifts of quiet, restoration, unwinding, healing, hibernating.

We all KNOW
how to slow down.

Do we act on it as often as we should?

Perhaps read a good
book (Shel Silverstein is always a light-hearted choice). Enjoy listening to the Buddha Baby interview below (Leah is an amazing individual with much to share). Peruse some articles and events posted at Our Valley Events (see link below). Take time to clean your house before Chinese New Year on February 10th. Rejuvenate your practice with a new yoga mat (shop my link below at right). Feast your taste buds on the grounding energy of the Stuffed Acorn Squash recipe I've included at bottom. 

Soon, this heavy, cold energy will shift and make way for spring. Daffodils will peek through the red clay. The dogwoods will begin to bud. Until then, allow yourself to be still... to be introspective... to settle down within empty space.

After pranayama, asana flows, alignment postures, and laughter-inducing partner poses, we finished the class in a large circle of postures, acted like kids & folded forward to roast our invisible marshmallows. :) 

 

 
Stuffed Acorn Squash with Pears and Cheese

Ingredients:
2 medium acorn squash
1 tablespoon olive oil
2 medium pears, cored
4 green onions sliced
1 clove garlic, minced
1 15 ounce container ricotta cheese
1/2 cup shredded cheddar cheese
1/4 cup raisins chopped
1/4 cup chopped pecans
1 teaspoon finely shredded lemon peel
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/8 teaspoon pepper

Directions:  

Halve squash lengthwise; remove seeds. Place squash, cut side down, in a 2 quart rectangular baking dish. Bake, uncovered in a 350F oven about 30 minutes or until tender.  

 

Meanwhile, in a large skillet, cook pears, green onions and garlic in hot oil until tender but not brown. Remove from heat. Stir in ricotta cheese, cheddar cheese, raisins, pecans, lemon peel and nutmeg.  

 

Turn squash cut side up, in baking dish. Season with salt and pepper. Spoon cheese mixture into the baked squash, mounding as necessary. Continue baking for 20 to 25 minutes more or until heated through.  

 

4 servings.
