early spring  2013

wild garlic
Greetings from New Rivers Restaurant!

While we're hesitant to call winter quits and welcome spring, the recent influx of temperatures in the mid 60's certainly makes us beg the question 'are we there yet?'.  We've noticed the spring bulbs are coming out of their winter hibernation and on a recent walk in the woods, we were delighted by the first wild alliums poking up.  As we walked along a 150 year old hedgerow in rural Rhode Island, the smell of green and the smell of garlic were intense, a sure sign that spring had, indeed, sprung.  These little wild garlics above will find their way in to several of our early spring offerings as will the wild onions, watercress, and bitter herbs that so densely populate our meadows, coasts, and forests in the early spring.  While we think the barren winter landscape is beautiful, we always enjoy and look forward to the shift in seasons when brown gives way to green.
Thanks for keeping up with us and we look forward to seeing you all soon.

shad roe
SHAD ROE!!
It's that time of year when the humble shad makes its journey up the Connecticut River to spawn.  With mature females setting their roe sacks in late winter/early spring, the time is upon us to enjoy this ultimate spring delicacy.  With the flavor of brine and mineral combined with one of the most unique textures ever, these once a year treats are a must try.  Ranging in size from a few inches long to up to 8-9 inches, these sacks contain 100's of thousands of tiny eggs all encased in a thin, delicate membrane.  Most classic recipes you'll find have them paired with some kind of smoked pork/bacon, fresh herbs, lemon, etc.  We'll be serving them a few ways: with bacon, grilled, smoked, pan roasted, even salt cured to become our version of bottarga.  We have calls in to our fishmongers and we are patiently waiting the first arrival.  Give a call over and check with us this week and we should be flush with many 'pairs' as they're called.
