The Ragan's HOPE Easter project was, once again, a wonderful success!  THANK YOU THANK YOU THANK YOU to ALL of the Volunteers in all the different areas for assembling, donating and delivering!  We couldn't do this without YOU!  The families are so very appreciative and it certainly "takes a load off" of them!

Partner News:

In addition to providing Easter bins, baskets or bags to the families we support, our team in Louisiana was able to provide to three different children's hospitals, and Ronald McDonald House in New Orleans.  In North Carolina, the team put together a whopping 175 baskets and after delivering to the Ragan's HOPE families, provided Easter baskets to EVERY child at Levine Children's Hospital and Ronald McDonald House in Charlotte.

Recipe of the month:

2-INGREDIENT SLOW COOKER SALSA CHICKEN

PREP TIME: 1 MIN  
COOK TIME: 4 HOURS
 
INGREDIENTS:
  • 4 boneless, skinless chicken breasts (about 2 lbs total)*
  • 2 cups favorite salsa
DIRECTIONS:
Place chicken breasts in a slow cooker and cover with salsa. Toss until the chicken is covered.
Cover and cook on high for 4 hours (or low for 6-8 hours), or until the chicken shreds easily with a fork. Shred the chicken in the slow cooker and toss with the remaining salsa and juices until well-mixed. Serve immediately, or refrigerate in an airtight container for up to 5 days. (This chicken also freezes well.)

Serve on flour or corn tortillas

Optional topping ideas:
sour cream
guacamole
shredded cheese
tomatoes
lettuce
onions
sliced avocado
lime / lemon juice
jalapeno peppers
sliced mango 
corn
black beans
