"Best of Spain" Special Wine Dinner Friday, Nov. 14

On Friday, November 14 we are pleased to welcome Vintage Import's Lee Kuehn for an exciting "Best of Spain" Special Wine Dinner!

This dinner will feature some top Spanish offerings with five wines earning scores of 90-93 points from Wine Spectator or Wine Advocate. Chef Simon has come up with a menu with heavy Spanish influences that is sure to please the senses.

It is always nice to experiment and sample different flavors - and we have not featured the food and wine from this region in quite some time. Please join us for what promises to be a memorable Wine Dinner event!

The Carlton Food & Wine Tasting Event
Wednesday, October 29 

 

Please join us on Wednesday, October 29 for a unique Food and Wine Event featuring six potential new menu offerings and a sampling at least fifteen wines from our cherished vendors!

From 6:30 until 7:15 you will be able to sip featured wines and taste small samples of Chef Simon's new potential menu offerings. At 7:15 you can "vote" for your favorite by ordering it as your featured entree for the evening.

Likewise, you can "vote" for your favorite wine by ordering that with your entree or continue to taste through with smaller samples of many varietals. Soup or Salad and Dessert will accompany each meal.

This hybrid event should be great fun and it is always nice to involve our guests in food and wine selections for our daily changing menu!
The Carlton Restaurant Celebrates 30 Years
of Fine Dining in Pittsburgh This November 
In November of 1984, I was thirty years old and excited about opening a fine dining restaurant in downtown Pittsburgh.

It was my first big project and the culmination of two years of research, revised blue prints, menu engineering, hiring and training. I was working with Levy Restaurants, a young restaurant company headquartered in Chicago. I helped to grow that company and opened restaurants in other markets with them.

However, once the travel demands became too much for my young family, I was able to buy out Levy's interest in Pittsburgh and become the sole operator of The Carlton. It really seems like yesterday that we opened our doors! Now we are celebrating 30 great years! I want to thank every guest that has patronized us over the years and everyone that has ever worked here helping us to grow and sustain our reputation.

Sweet Bell Pepper stuffed with Tomatoes, Capers, Olives, Spinach,

BLACK SEA BASS 
Oven roasted and served over braised Belgian Endive with
Acorn Squash, Sweet Corn Succotash and Gooseberry Vinaigrette.
 

WAGYU BEEF CHEEKS 
Tender slowly braised Beef Cheeks served with Three Beet Risotto,
Port infused Morel Mushrooms, Baby Arugula, Tomato Concasse and Pan Jus Reduction.


AHI TUNA
Honey-Sesame seared Ahi served chilled over Bamboo Rice with sweet & spicy
Green Tea-Leek Broth, braised Red Cabbage and crushed Wasabi Peas.  
 
LAMB LOIN
Olive Oil and Rosemary brushed Lamb Loin pan roasted and served with a Pumpkin-Millet Cake, Rapini-Swiss Chard-Kale Saut�, Chimichurri Sauce and toasted Pepitas

Quinoa Linguini Noodles tossed with Butternut Squash, Sundried Tomatoes,
