6 Things That Make Our Olive Oils Different


Extra virgin olive oil is a cooking staple in kitchens all over the world, and when it's good, it is a thing of beauty. Unfortunately, olive oil is one of the most commonly mislabelled foods. It's often cut with cheaper oils, made with poor quality olives, or it's well beyond its prime or even rancid. 1-  Our olive oil is 
fresh. 
Al
l of our oils are less than 18 months old. And that's 18 months since the day the olives were crushed.
We are able to keep them fresh by sourcing our oils from both the northern and southern hemispheres. That peppery kick you get at the back of your throat when you 
taste
 really good olive oil is usually a sign of freshness. Expiry and best before dates don't mean anything. Always asks for the crush date
.


2 - Our oils are made with high quality olives  that were picked from the tree not scraped off the ground. Yup that's how some people do it. Gross, I know.

3  - Olives for our oils are picked and crushed at the right time. They are  crushed within 4 hours of picking . They don't sit in a pile for weeks or months to rot. Again, yuck, can you believe this is what people bottle and sell as extra virgin olive oil?

4 - Our oils are all tested by a third party lab to ensure authenticity and quality.

-  Fresh olive oil often carries very fresh, green flavours. Sometimes it even smells like freshly cut grass!  The most common flaws we find in average supermarket olive oils labeled extra virgin are 'fustiness' and 'mustiness'. These flaws bring on a very flat and bland taste. This is actually caused by the olives starting to go bad before the oil is made! 

6 - Not only does our olive oil taste amazing, it's packed with antioxidants. Studies have shown extra virgin olive oil's health benefits include a reduction in risk of coronary heart disease, the prevention of cancers, alterations of immune and inflammatory responses and benefit to healthy cholesterol levels. What most people don't realize is that all of these wonderful benefits are present when olive oil is still fresh and is produced from quality fruit. The unfortunate truth is that most of the bottles our groceries store shelves don't meet these standards.
