Buffalo Mozzarella and Tomatoes
aka
Caprese Salad
The Salisbury Farmer's Market is in full swing and tomatoes are just coming in now. One our staples not only in summer but year round is Caprese Salad. Very simple: Tomatoes, mozzarella cheese, olive oil and fresh basil. You can also drizzle some balsamic vinegar to finish it off.

Of course you should use the best ... and original mozzarella. And that would be water buffalo mozzarella. Mozzarella was first made in Italy near Naples from the rich milk of water buffalo and has been traced to around the 12 century. So, give yourself a treat. Stop by the Wine Shop, pick up some Buffalo Mozzarella and head to the Farmer's Market this Saturday for some tomatoes (and peppers, corn, squash, okra and a bunch of other goodies). You'll be happy you did.
