I love sparkling wine! In fact, one of my favorite things to do is sitting down to watch a movie with Champagne and popcorn. The saltiness of the popcorn is the perfect complement to the bubbles of the sparkler. But, you don't have pay Champagne prices to get a great sparkling wine. This week I bring you an amazing, affordable and complex Cava from Bohigas. Here's what Wine Advocate had to say about this beauty.

"Made from a classic blend (for this area) of Xarel-lo, Macabeo and Parellada planted in limestone and clay soils, the wine spends 24 months on its lees before disgorgement. It is an excellent value for consumers looking for alternatives to French Champagne. Lemon/lime, crushed rock and white currant notes are present in this crisp, elegant, refreshing, zesty, dry sparkler. Hints of wheat thins and brioche add complexity." 90 Points, Wine Advocate.

Saint Angel is plump and pillow-like, covered with a fluffy, white rind. Beneath its rind lies an ivory paste with the texture of chilled, whipped butter. Its flavor is buttery, too, with the right amount of salt, and a mild tanginess, especially by the rind. 

Enjoy this French masterpiece with this week's Bohigas Brut Reserva Cava. It's very rich so the Cava will do a beautiful job balancing out the butter content and bringing out the sweet cream of this cheese.
