Snapple at Lake Placid!


 This year, Snapple showed up in full force at Lake Placid!

Greg Close and Erik at the Olympic Oval

Erik Reitinger qualified for Kona by placing 4th in the 30-34 AG!


Bart Forsyth finished 10th in his AG, moving up nearly 80 spots thanks to an awesome bike split!

August Recipe:

Sausage, Red Onion, and

Wild Mushroom Pizza pizza!



So no big surprise that, in my stalking of new favorite swimmers to follow, pizza was the all-reigning favorite indulgence food.


Me and the Olympians have something in common.


I love pizza, or Za as the Scrabble dictionary proclaims the word is shortened to. Who wouldn't love cheese on top of carbs!?!?!?


So here's an easy pizza recipe for this month's Olympic games!



  • Pizza dough from Trader Joe's - easier than kneading your own, and only 99 cents!
  • pizza sauce or tomato sauce with herbs
  • 2/3 cup finely grated Parmesan cheese
  • 2 1/4 teaspoons finely chopped fresh rosemary, divided
  • 1/2 teaspoon dried crushed red pepper  
  • 2 1/2 hot Italian sausages
  • 1 small red onion, thinly sliced
  • 7 ounces fresh wild mushrooms (best for this pizza would be shiitake or chanterelle!), thickly sliced
  • 2 cups grated whole-milk mozzarella cheese

Preheat to 450�F.

Divide dough in half. Knead each half of dough out until you get even thickness throughout - you can really do any shape you want. Rectangle (Ledo's!) or circle (traditional). 


Sprinkle each with 1/3 cup Parmesan cheese, 3/4 teaspoon rosemary, and 1/4 teaspoon crushed red pepper; sprinkle with coarse salt. Roll each piece of dough out to 10-inch round, pressing in seasonings.


Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add sausage. Saut� until brown, breaking into little pieces. Transfer sausage to bowl.


Add onion to skillet. Saut� until crisp-tender, about 2 minutes; transfer to another plate.


Add remaining 1/2 tablespoon oil to skillet. Add mushrooms and remaining 3/4 teaspoon rosemary; sprinkle with salt and pepper. Saut� until brown, about 5 minutes. Leaving 1/2-inch plain border, top each dough round with 3/4 cup mozzarella, then onion, sausage, and mushrooms.


Bake until crust bottoms are crisp and brown, about 20 minutes.

Once you take the pizzas out of the oven, sprinkle each with some mozzarella and fresh parsley if you want!
