Bio:
Erin Corsa received her Bachelor of Science in Nursing from Virginia Commonwealth University and her Master of Science, Family Nurse Practitioner degree from Simmons College. Ms. Corsa is certified as a family nurse practitioner by the American Nurses Credentialing Center. She is a member of the American Association of Critical Care Nurses and the Nursing Sigma Theta Tau International. Ms. Corsa has over six years of experience as a staff nurse/clinical coordinator on a busy progressive care medicine floor specializing in patient teaching, leadership/mentorship of staff, and clinical expertise with a wide range of patients and diagnoses.
 
Ms. Corsa is from Reedville and excited to be close to her family and roots.

What do you enjoy most about being a family nurse practitioner?

Anything and everything! I love everyone from small children to aging adults. I especially enjoy providing sports physicals for the older children so that they can engage in their athletic activities. 


Why did you choose Bon Secours Health System?
I love the values that Bon Secours was built on. Also, I have been lucky to join a large healthcare network while still achieving the down-home rural feel of a small practice in an area on Virginia that really needs healthcare providers. I like all that Bon Secours has to offer me in terms of growth and learning opportunities.

What do you enjoy outside of your work?
A majority of my free time is spent on the water with family and friends. I have a horse named Opie, with whom I spend a great deal of time, and I enjoy working with young or "problem" horses. I play on soccer and kickball teams of nurses and doctors when I have time.

Greek Avocado Toast with Cherry Tomatoes

Prep time: 5 minutes; serves 4-6

Ingredients:

3 avocados, peeled, pitted, & diced
Juice from 1 lime
1 clove garlic, minced
Salt and pepper to taste
6 slices bread, toasted
1 cup fresh cherry tomatoes, halved
1/2 cup crumbled feta cheese
 
Directions:

1. Place avocado, lime juice, and garlic in a small bowl. Mash with a fork until smooth. Season with salt and pepper to taste.

2. Spread mashed avocado over toasted bread and top with cherry tomatoes and feta cheese. Enjoy!

RIPE OR NOT?
You can tell that an avocado is ripe when it feels heavy for its size and is dark in color. If you need to speed up the ripening process, place your avocado in a brown paper bag for 2-4 days. Adding a banana to the bag will speed up the process even more!
