Recipe from the Chef

Roasted Beet Salad

Ingredients:

1.5  pounds   beets   fresh

8   ounces   chevre   (fresh goat cheese)

6   cups   baby arugula or fresh mixed greens

1   cup   Pecans   toasted

  1/4   cup   The Spicy Olive's A-Premium white balsamic vinegar   + 2 Tablespoons

1 Tbsp
The Spicy Olive's Champagne & Roasted Garlic or a grainy good quality mustard

Pepper   to taste

1/3   cup   The Spicy Olive's Ultra Premium extra virgin olive oil   + 2 Tablespoons

Preparation:

Preheat oven to 400 degrees. Trim the beets and wrap in a foil packet and drizzle with 1 Tablespoon water before sealing. Roast for 1 hour or until tender when pierced with a knife. Once the beets are cool, peel them by rubbing the skins off with a paper towel. Cut the peeled beets into 1 inch pieces and toss with 2 Tablespoons of both the white balsamic vinegar and olive oil and set aside.

In a medium sized bowl,  whisk together the remaining white balsamic with the mustard until well combined.

JoyRide
A car club exclusively for kids with special needs
Thank you and Event Recap!

JoyRide is a car club exclusively for kids with special needs. During JoyRide events, kids trade the everyday worry of doctor's visits and medication for a chance to cruise in high-end or one-of-a-kind cars. Along with car rides, JoyRide kids enjoy a chance to make new friends, network and build a sense of belonging.

Thank you to everyone who came out August 26th to support  an amazing first event! To the car owners, volunteers, and parents of our members; thank you for everything you do! To our members; YOU GUYS ROCK! We couldn't have done this event without any of you!
What to Expect
JoyRide events aim to put smiles on faces by creating a fun and engaging atmosphere for kids with special needs. Kids get an up-close look at the unique cars on display by sitting in them and even going for rides! JoyRide events also create a sense of community by bringing families together.

About the Ride
Cars maneuver through a marked course at no more than 20 mph. Parents watch as their kid rides through the course in an enclosed parking lot. Booster seats and seat belts ensure kids are safe. It's recommended to bring noise cancelling headphones for kids who are sensitive to noise. Videos and pictures are captured and distributed after each JoyRide event. JoyRide limits car rides to one ride per event.

BACK TO SCHOOL SAFETY
It's that time of year again when children across the country are preparing to go back to school. It is important for drivers to slow down and pay attention when kids are present - especially before and after school. Motorists can prepare for the back-to-school season by following a few simple safety tips.

School Zone Driving Safety Tips
  • Be on the lookout for school zone signals and ALWAYS obey the speed limits
  • When entering a school zone, be sure to slow down and obey all traffic laws
  • Always stop for school busses that are loading or unloading children
  • Watch out for school crossing guards and obey their signals
  • Be aware of and watch out for children near schools, bus stops, playgrounds, school parking lots and in residential areas
  • Never pass other vehicles while driving in a school zone
  • Never change lanes while driving in a school zone
  • Never make U-Turns while driving in a school zone
