Here is my list of items I will be making for Saturday May 9th for the Mecklenburg County Market. Please call me (704-533-0073 Beverly McLaughlin) or reply to this email with your orders if you would like me to save you a quiche, casserole, salad, or a quart of my products. (I always make extras of the items on the menu, however items do sell out so, it's best to reserve an order to guarantee it will be there.) If you do not receive an email confirmation by Friday afternoon that I received your order please call me.
My menu changes weekly, I have over 270 items in my line of products special orders are available with advance notice.  My products are vegetarian and vegan. I only cook with olive oil. I do not use processed foods, artificial coloring, artificial flavorings, or preservatives in my products, only whole foods. My products are prepared in a commercial kitchen. I am ServSafe Certified and my Health Department Inspection is 99. We recycle all paper, plastic, glass, and canned items and my packaging containers are now recyclable.

Home Made Ranch Dressing
This is a fresh, zesty dressing my kids love!  Buttermilk, sour cream, Duke's mayonnaise, dehydrated onion.

Creamy Cilantro Lime Vinaigrette
This recipe was developed in a cooking class one night and the attendees said it was the best salad dressing they've had.  I hope you guys think the same. Greek yogurt, cilantro, fresh lime juice, olive oil, garlic, white wine vinegar. $6.95 / 8oz. Bottle (Vegetarian, Gluten Free)

Artichoke Dip

 Homemade Pimento Cheese   
This is my grandmother's recipe.  We love it!  We discovered the pimento cheese is excellent warmed up as a dip.  It's made with extra sharp cheddar, cream cheese, duke's mayonnaise and pimentos.  This is a spread or a dip and goes well with the soups.  Packaged in pint containers.

Soups

Strawberry Soup
We make this soup with local strawberries, yogurt, honey, sour cream and sweet wine.  My daughter loves this soup!  It is best served cold as an appetizer or desert soup.  $9 / Qt.  (Vegetarian and Gluten Free)

Gazpacho is Back!!
Some of my customers tell me this soup makes a great Bloody Mary Mix.  I will have it every week this summer,  it's best served cold as an appetizer or main course. 
Fresh tomatoes, cucumbers, red peppers, green peppers, very little onions and garlic, a blend of tomato juices and a blend of vinegars.  $9 / Qt.    (Vegan and Gluten Free)

Spiced Red Lentil Soup (Yummy!!)

I love this soup, I could serve it everyday, it has become one of my favorites!  Red lentils, chopped tomatoes, garlic, serrano peppers, coconut milk, fresh cilantro, caramelized onions, olive oil, and spices. $9 / Qt.

Watercress Soup
Watercress dates back to the 15th century in Ireland.  Farmer's picked the watercress off creek banks and used it in salads. Fresh watercress, coconut milk, vegetable stock, onions and spices.  This is my Dad's favorite, my children like it too. $9 / Quart.  Goes well with pimento cheese sandwiches . This soup can be eaten slightly warmed or cold.   Freezes well.    (Vegan and Gluten Free)
  
  
Asparagus Bisque  
  Local asparagus, onions, celery, carrots, potatoes, cream, vegetable broth and a blend of spices.  This soup is pureed and makes a wonderful appetizer.  Goes well with the Pasta, Lentil Salad with Fruited Bulgar, or pimento cheese sandwiches.  Serves 2 - 4 / $9 Qt   (Vegetarian, Gluten Free)

Local collards slow cooked and seasoned with 3 types of vinegar, olive oils, garlic, salt and pepper. (Vegan and Gluten Free) 
  Casseroles 
      
GLUTEN FREE Macaroni and Cheese Casserole
      
I make my macaroni with three cheeses, butter, cream, milk and salt.  It's delicious and my children love it.  Serves 4 - 6 $11.95.  Packaged in an oven-ready casserole pan.  Heat at 350 for 30 - 45 minutes.   Goes well with the Salads and the Soups.   (Vegetarian, Gluten Free)

Broccoli Casserole
 My broccoli casserole is prepared in my 6x9 casserole dish.  It is cooked in full, all you need to do is warm it up.  Chopped broccoli, sharp cheddar cheese, mushroom bisque, free range eggs, sour cream, mayonnaise, topped with cornflakes and melted butter.  Serve with the Soups, or the Quiche.  $11.95 (Vegetarian)  

Vegan Stuffed Cabbage Rolls
My cabbage rolls are stuffed with my version of Mexican Picadillo (crushed tomatoes, texturized vegetable protein, Granny Smith apples, green olives, serrano peppers, garlic, raisens, bell peppers and spices.) all this stuffed inside a cabbage leaf with a light tomato sauce. Serves 2  $11.95 (Vegan and Gluten Free)

Baked Ziti with Mozzarella and Ricotta Cheeses
I like to make ziti for my children because I think it's a good winter time comfort food and because I know they will eat it!  Ziti pasta, homemade marinara sauce ricotta, mozzarella and Parm

Organic Quinoa Stuffed Red Peppers

Vegan, Gluten Free Burger

Planet Burgers
 I am always trying to find a veggie burger that my children will eat.  This one was a hit.  I am offering it to you in a pint container so you can make your burgers to the desired size.  Brown rice, chickpeas, onions, red beans, carrots, almonds, sunflower seeds, wheat free soy sauce, garlic and spices.  $7.99 lb.

Lasagna Entree           

Spinach and Mushroom Lasagna (for two)
This lasagna is low in fat because it is made with cottage cheese instead of ricotta cheese.  Organic Spinach, carrots, mushrooms, homemade marinara sauce, fresh basil, pasta, cottage cheese, mozzarella cheese, and fresh garlic.  Freezes well.  $11.95 Microwavable container.  (Vegetarian)
       
Gluten Free is also available.  I use Tinkyadia brown rice pasta.

Quiche 
Spinach, Mushroom, and Feta Quiche
Spinach, mushrooms, caramelized onions, eggs, cream, feta cheese and a blend of other cheeses in a deep dish pastry pie crust.  Serves 6-8 $15.95  Freezes well.  I would serve this with the Corn Chowder, Casseroles, or The Lentil Salad with Fruited Bulgar.   (Vegetarian)

Mediterranean Vegetable Casserole 
This is basically a crustless quiche, packaged in my casserole pans.  Spinach, caramelized onions, mushrooms, artichoke hearts, kalamata olives, sundried tomatoes, mozzeralla, Parmesan, feta and free range eggs, evaporated milk.  Serves 4  $11.95  (Vegetarian, Gluten Free)

 

Tomato Basil Pie (Made with Fresh Basil)  
Layered tomatoes, feta cheese, Parmesan cheese, fresh basil, caramelized onions, olive oil, salt and pepper in a pastry pie crust. This pie goes well with everything, good for lunch, dinner or parties!

Greek Pasta Salad
 This is a perfect picnic salad for this nice weather we are going to have this weekend.  Rotini tri-colored pasta, feta cheese, red and green peppers, artichoke hearts, purple onions, a blend of vinegars, olive oil, salt and pepper. (no garlic) Serves 2 $3.99   (Vegetarian) 

White Bean and Fennel Salad
This is a great Italian salad or dipping sauce.  Great Northern bean, Navy beans, fennel, sweet red peppers, orange juice, fresh basil, fresh mint, garlic and olive oil.  $3.99  (Vegan and Gluten Free)

One of our best....!

Potato Salad With Fresh Dill
This is a perfect treat to take on a picnic.  Baby red potatoes, celery, onions, mayonnaise, mustard, salt and pepper.  (Vegetarian, Gluten Free) $5.50 pt. 

Deviled Egg / Egg Salad
After much debate, we decided in my kitchen deviled egg and egg salad is exactly the same thing it depends on what you grew up calling it.  I make mine with free range eggs, green olives, mayonnaise, mustard, apple cider vinegar, salt, pepper, and spices.  Packaged in 1/2 pint containers.  $5.95.   (Vegetarian, Gluten Free) 
Vegan Chilis  

South Austin Chili (Entree)
While beans are not a preferred ingredient in true Texas chili, it's kind of difficult to envision a vegetarian chili without them.  You should be able to fool any die-hard meat eater with this chili.  Crushed tomatoes, kidney beans, garbanzo beans, black beans, onions, garlic, chocolate, chipotle en adobo, pasilla chilies, TVP (Texturized Vegetable Protein), dark red kidney beans, chili powder and spices.  Serve with Pimento Cheese sandwiches, the Mac and Cheese, or the Lentil Salad, top with cheddar cheese and corn chips for serving.  $9.00 Qt.  Serves 2 - 4   (Vegan, Gluten Free)
