Local strawberries are coming

We are really beginning to see more variety this week from our local farms.

New items such as bunched carrots, beets and cucumbers will be arriving this Wednesday. It looks like we'll also see the first of some local zucchini squash.

Strawberry season kicks off this week but we're never certain of how many we'll end up getting until we get to the fields Wednesday morning. So for that reason, they will likely appear in the produce baskets next week. We will be sure to post on our social media pages when they arrive to our market.
All the local farms are trying to move their bountiful GREENS and radishes so now is the best time of the year to lighter up our plates and incorporate as many different varieties of greens as possible in our diet. I like to think of greens like a soap for our insides. They help clean out all the sludge and toxins we have likely accumulated over the Winter months. I try to consume at least 3 different types of greens a day and that may seem like a lot to some people but when you add them to smoothies with some delicious fruit, it makes it easier to get your fill. 
I find the best greens for smoothies are spinach, romaine and Swiss chard. I save the spicier or more peppery greens such as arugula and watercress for salads or I add them to cooked dishes. One of the best greens for detoxifying the body is dandelion and we have added that to our offerings this week. Kale is also very good added to cooked dishes but can also be massaged or chopped into small pieces for a nice salad. If you prefer a tender, more mild kale, be sure to try Equinox Farm's baby kale.

When you consume more produce, you not only make yourself healthier but you help support our local farms so it's a win-win.

All of those spring ingredients — asparagus, arugula and basil — tied together perfectly to give the salad a deliciously fresh and peppery and savory flavor.  The lemon juice (and peel) gave it a bright kick of citrus.  And the feta cheese was wonderfully creamy and tied everything together perfectly.

Briefly roasting the kale gave it great flavor and an appealingly crisp texture. After portioning the rice and vegetables into bowls, we drizzled everything with a shallot vinaigrette and topped each bowl with a fried egg.
