Dear Beer enthusiast,
Our next Abbey Wednesday
! We will taste 3 beers from the Abbay of Chimay.
Chimay is the most famous of the only 7
breweries in the world that that can use the Trappist seal.
Trappist monks are part of the Cisterian order of strict observance. While they might be strict about many things, the one leisure that God granted those monks is to make beer.
And not just any beer: Trappist beer. Trappist beers are not really a style, it is more of a certification. Trappist beers can be high in alcohol, low in alcohol, they can single, double, triple or quadruple, they can be dark or golden, some have dark candy sugar, others are spiced. Each one is unique.
The one thing that trappist beers have in common is that they are brewed by Trappist Monks. There are a total of 7 trappist breweries: Chimay, Rochefort, Westmael, Orval, Westvleeteren, Achel and the only one outside of Belgium, La Trappe, just across the border in the Netherlands. For all their differences, they have certain features in common: The monks may be celibate but they have fathered a family of beers.

Over the next few weeks we will sample beers from all the trappist breweries (excluding Westvleeteren which is currenlty unavailable in the US)
