Well we made it through another Lobstermania! We wanted to take moment to thank those of you who came out and supported it. It's always a crazy day and it's a lot of work, but seeing you folk load up your coolers and head off to your lobster parties makes it all worth it. With another week though comes a whole new batch of specials. Tunas, Swordfish, Redfish, Salmon and Shrimp are all on deck this week but the item we are most excited about are our Baja California Catarina Bay Scallops!
Baja Bay Scallops are all diver caught and hand shucked, yielding a superior quality of scallop. Most of these bay scallops come out of the Magdalena Bay located on the Pacific Ocean and are also known as Catarina Bay Scallops. Magdalena Bay is located at the meeting point of two of the most influential currents of the Easter Pacific, the cooler California current system from the North - an extension of the Alaska current - and the warmer Equator
ial Counter current from the southern pacific. Magdalena Bay is o
ne of, if not the, richest estuarine waters of the world.
The sizing of this scallop is much smaller than the sea scallops we typically feature. Because of this, bay scallops benefit from a short cook time and gentle methods of preparation such as poaching or a quick sauté. Bay scallops also differ very much in flavor and texture from sea scallops, being much more tender, delicate and sweeter. Bay scallops are fantastic additions to pastas, stews and things of that nature!
