I tried my hand this week at making my mom's Bologna Spaghetti that she used to make when we were growing up.  Unlike your traditional spaghetti, instead of Italian seasonings, she would use chili powder.  Hope you like it!

  Bologna Spaghetti

 

Bologna Spaghetti

3 tablespoons oil

2 small onions, chopped

1 bell pepper, chopped

2 ribs celery, chopped

3 small cans tomato sauce

1/2 teaspoon salt

2 teaspoons chili powder

1/4 teaspoon garlic powder

2 teaspoons brown sugar

1 lb. bologna, cut in chunks

Boiled spaghetti

 

Cook onions, bell pepper, and celery in oil for at least 1/2 hour, stirring often so it doesn't stick.  Add a little water if needed.

 

Add tomato sauce and seasonings.  Cover and simmer at least another 1/2 hour, stirring occasionally.  

 

Stir in bologna and simmer 15-30 minutes.

 

Serve over hot boiled spaghetti. 

 

BoudreauxHey Boudreaux!           

 

 

Boudreaux and Clotilde saved up for their 2-week dream vacation to Australia and were finally able to go to celebrate their 40th wedding anniversary.  

 

They were flying to Australia when suddenly, over the public address system, the Captain announces,"Ladies and Gentlemen, I am afraid I have some very bad news. Our engines have ceased functioning and we will attempt an emergency landing. Luckily, I see an uncharted island below us and we should be able to land on the beach. However, the odds are that we may never be rescued and will have to live on the island for the rest of our lives!"

 

Thanks to the skill of the flight crew, the plane lands safely on the island. An hour later Boudreaux turns to Clotilde and asks,"Clotilde, did we pay our Visa and MasterCard bills yet?"

 

"No, sweetheart," she responds.

 

Boudreaux, still shaken from the crash landing, then asks, "Clotilde, did we pay our American Express card yet?"

 

"Oh, no! I'm sorry. I forgot to send the check," she says.

 

"One last thing Clotilde. Did you remember to send the tax payment to the IRS?" he asks.

 

"Oh, forgive me, Boudreaux," begged Clotilde. "I didn't send that one, either."

 

Boudreaux grabs her and gives her the biggest kiss in 40 years. Clotilde pulls away and asks Boudreaux, "Mais, what was that for?"

 

Boudreaux answers, "They'll find us!"
