The success of the Ontario Harvest has kept us busy in the winery all fall. A couple of wines to note are our barrel fermented Ontario Chardonnay and Chilean Fume Blanc which are resting in their barrels until spring.

Using the French "sur lie" method of aging, these wines were fermented in the barrel and remain there, in contact with the sediment as the wines age. This sediment, dead yeast cells or lees, gives these wines more flavour and complexity.

Some of our clients were lucky enough to take advantage of our guest Argentine winemaker, Lucas Mendoza, while he was here during the harvest. They had the opportunity to put their name on a barrel of either Chardonnay or Fume Blanc that was fermented using this method. Come for a visit to take in the incredible fragrance this barrel aging produces.
