As you might surmise from the above photos, our chefs love to cook with Ramps. They are not alone. Even Mario Batali recently Tweeted about his love of Ramps.
Wild Ramps
"Ramps (which are sometimes called wild leeks or spring onions) look like scallions, but they're smaller and slightly more delicate, and have one or two flat, broad leaves. They taste stronger than a leek, which generally has a mild onion flavor, and are more pungently garlicky than a scallion." Ramps sometimes sell for as much as $20 a pound!
We are fortunate that Ramps occur in the wild near the INN. We recently took a boat ride to Butler Island on a foraging trip. Ramps are easy to spot as they are often the only patch of green on the forest floor before the leaves emerge in Spring. We hope you will come to the North Hero House soon to try a dish made with our supply of "Chef Foraged" local Ramps.
