The Versailles Restaurant Cookbook features some of the most beloved recipes from this Miami institution, including fried yuca, vaca frita (shredded beef with onions), lechn asado (roast pork), ropa vieja (shredded beef in tomato sauce), guava pie, and, of course, the one, the only, the original Cuban sandwich. Ceviche

Serves 4 to 6

Credit: Michael Katz

CEVICHE is a light and fresh white fish salad marinated in citrus juice. This Peruvian dish has made its way to the Cuban table, and the Versailles version is especially good. It is the perfect light meal for summer days--or almost any day in Miami--and can be paired with a crunchy side such as Versailles' homemade malanga chips.

  • 2 pounds very fresh white fish cut into strips
  • 2 jalapeos finely minced
  • 1/2 cup finely chopped cilantro
  • 3/4 cup fresh squeezed lime juice
  • 1/4 cup fresh squeezed orange juice
  • 1 teaspoon salt

For Garnish

  • red onion slices
  • diced tomatoes
  • sliced avocado

Combine all ingredients except red onion slices, diced tomato, and avocado in large bowl. Allow to sit for 45 minutes to an hour depending on size of fish strips. Add more salt and pepper if necessary. Garnish with sliced red onion, avocado, and diced tomatoes. Serve with fried boniato (sweet potato) or malanga chips.
