Kay Meets the Thai Ambassador to the United Nations
Kay had the honor and pleasure meeting the Thai Ambassador to the United Nations Dr. Virachai Plasai and his wife last weekend on his recent visit to Manchester, Vermont. Dr. Plasai was here at Manchester’s first Independent Television and Film Festival (ITVFest) sharing Thailand’s sustainability efforts and how continuing collaboration with Vermont is mutually beneficial.

Pick your own apples over the next two weeks – the McIntosh, Empire, Red Delicious, Liberty and Macouns are ready for picking now! If you’re not apple picking, try some of the best hot cider donuts you’ll find anywhere! Oh, and the photo is our apple tree on the front lawn!
   Hen of the Woods... Interesting Story!
I only learned about Hen of the Woods mushrooms recently after visiting Hen of the Woods restaurant in Burlington – extraordinary, but you already read about that in our We’ll Show You What’s Great About Vermont newsletter in July. Okay, back to the story… Kay and I were picking up our duck eggs from the farm down the road and were asked if we wanted to go out on a quick forage. We enthusiastically agreed and off we went on an ATV up the mountain! Within 10 minutes we came upon a huge white oak where we found a rich collection of Hen of the Woods. With a quick swipe of the knife Damon provided enough mushrooms for six meals! We’re going foraging again this week for Hen or Chicken of the Woods and whatever else is in season – next year morels! Every day is an adventure here in Vermont! 
Looks Like an Ordinary Omelette....
We just served this delicious fresh Duck Egg Omelettte with sautéed Hen of the Woods mushrooms and Kay's homemade crème fraîche is garnished with chives from our garden! Our guests loved it!! Don't worry, we have fresh chicken eggs too!
Pesto Salmon with Hen of the Woods
Shortly after arriving back from the farm Kay cleaned and sautéed these mushrooms with a little butter and salt & pepper. This fruit of the forest floor was incredible and plentiful within a few hundred yards from the inn!
The Larson Farm hosted its 11 th Annual Columbus Day Weekend Steer Roast and Barn Dance , which we were fortunate to attend this year and is open to all! The Party is designed to support the Uganda School Project, helping to pay school fees for the neediest children in the Masaka District. Last year, contributions helped 42 children stay in school. The beef was absolutely delicious and just minutes from the inn!
Kay sampling some very fresh apple cider at the Larson Farm... Rich and Cynthia Larson have lived and farmed in Wells since 1977 and offer fresh, healthy food to the community – and they make pizza too! That’s Rich in the photo above, Click here to visit their website .
Green Mountain Railroad Fall Foliage Train Rides...
All Board on the Green Mountain Flyer ... Combining leaf peeping with a two hour Vermont train ride from Chester to Ludlow in vintage windows-open passenger cars is a unique way of seeing the fall colors come alive as you wind through the Green Mountains. Afterward, have lunch and visit all the interesting antique shops that Chester offers....
On recent foliage excursion through the Green Mountains we passed into New Hampshire and stumbled upon this magnificent covered bridge. Built in 1866, the Cornish-Windsor Bridge is the longest covered bridge in the United States and the longest two-span covered bridge in the world.  That's the Connecticut River below!
