Protect Your EYES with
Garden Greens!
   

We only get one pair of eyes, so it's important to take good care of them!  I'm sure you're all aware of how important it is to wear sunglasses with UV protection to prevent damage to your eyes, but new research shows that there's even more you can do to protect your eyes as you age... Eat dark leafy greens!!!

Spinach, kale and other dark, leafy greens are rich in antioxidants that act as a natural sunblock, shielding the eye from damaging light, reducing the risk for cataracts and advanced macular degeneration.  The nutrients in these greens can also help the eye detect contrast better, therefore improving your vision long-term.  So try incorporating as many leafy greens into your diet as possible...they'll keep your eyes fresh (and looking pretty too!)!

Parmesan Spinach Cakes

This recipe we found on eatingwell.com is a fun way to get those eye-protecting dark, leafy greens in...Sometimes the old standard of sautéed spinach gets a little boring, so try these little cakes as a fun alternative!


INGREDIENTS (yields 4 servings - 2 spinach cakes each):
  • 12 ounces fresh spinach (or frozen if you're in a rush!)
  • 1/2 cup part-skim ricotta cheese (or low-fat cottage cheese)
  • 1/2 cup finely shredded Parmesan cheese (and a little extra for garnish)
  • 2 large eggs, beaten
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Cooking Spray
DIRECTIONS:
Preheat oven to 400 degrees Fahrenheit.

Pulse spinach in 3 batches in food processor until finely chopped.  Transfer to a medium bowl.  Add ricotta, Parmesan, eggs, garlic, salt and pepper, and stir to combine.

Coat 8 cups of a muffin pan with cooking spray.  Divide the spinach mixture among the 8 cups (they will be very full).

Bake the spinach cakes until set, about 20 minutes.  Let stand in the pan for 5 minutes. Loosen the edges with a knife and turn out onto serving platter.

Serve warm, sprinkled with more Parmesan, if desired.
