Our local county fair started yesterday and I always look forward to some foods I only enjoy once or twice a year! This cinnamon swirl pancake recipe reminds me of an elephant ear treat. I recommend making your own pancakes from scratch, but a high quality boxed mix will also work.
Cinnamon Swirl Pancakes
Cinnamon filling: combine 2 T. melted butter, 1/4 c. brown sugar, and 1/4 tsp. cinnamon. Scoop into a baggie and snip off the corner.
Glaze: whisk together 2 oz. softened cream cheese, 1/2 c. powdered sugar, 1 tsp. vanilla, and up to 1 T. milk.
Preheat griddle after preparing the above items. Mix up your favorite buttermilk pancake batter. Add batter to greased griddle. Once bubbles form, create a swirl pattern with cinnamon filling, steering clear of the edges. Flip. Once cooked through, remove to plate and drizzle with glaze. Top with fresh fruit.
