Lobster Dip
3 each Fresh lobster tail meat, cooked and chopped
3Tbsp. Butter
3Tbsp. Flour
1 C. Grated cheddar cheese
4 each Chopped green onions
3C. Half & Half
1. Melt butter and blend in flour. Add onions and saute, do not let the mixture brown. Add 3 cups half & half. Add lobster and cheddar cheese. Simmer 10 minutes and pour into chafing dish. Garnish with parsley. Serve with toasted bread triangles (recipe below).
Remove crust from 1 loaf of white sandwich bread and cut bread into triangles (one diagonal cut through middle). Spread butter thinly on each side. Put in 250 degree oven and cook until very crisp. These can be kept crisp in a covered tin.
