Dear Mothers,

As a mother myself, I know how hard you work. Being a mother is a full-time job! To protect your kids and your family is the hardest yet most rewarding job of all. I want to remind you to not forget to credit yourself, to gift yourself, to love yourself and to remind yourself that you are blessed beyond belief -- you have the most important job in the world. 

To Kayla, I thank god everyday for making me a mother and blessing me with a beautiful girl that i am so in love with. I love you so much my Kayla!

To my Mother, I want to wish you a Happy Mother's Day! Although I don't see or talk to you every day, just know I think about you all the time and am always wishing you a long and happy life. I love you mom!

I also to want to  give a special shout out to all  of the women out there, especially single moms who may have gone through or are currently experiencing hardships. I may not know you personally, but I walk in your shoes every day and encourage you to embrace each and every struggle with inner strength and strong will to get through it. We share many common goals and strive to have balance in our lives. You are the backbone of your family and I salute you, your hard work and dedication. Wherever you are, I want you to know that I am wholeheartedly rooting for every single one of you beautiful souls.

Spiraled Out Salad
If you’re looking to have a day with the kids in the kitchen, this is an ideal recipe. Making vegetable ”noodles” with a spiralizer is not only fun, but a fantastic way to incorporate vegetable into a meal without making them look like traditional veggies. So go ahead and make eating vegetables fun for your kids!

Ingredients:
2 medium sized tuna steaks
4 cups of mixed greens
2 cups cucumber "noodles" made with a spiralizer
2 cups carrot "noodles" made with a spiralizer  
3 tablespoons white and black sesame seeds, toasted 
1 avocado, quartered 
1 15.5 oz. can of low sodium white beans

For the dressing
3 tablespoon apple cider vinegar
1 teaspoon finely minced fresh ginger
2 tablespoon coconut nectar
¼ cup sesame oil
pinch of sea salt and black pepper


Method
Sear tuna steaks for 1 minute on each side or until desired doneness is reached. Once done remove from heat, cool and slice. Set aside.

For the salad
In a large bowl combine greens, carrots, cucumbers, sesame seeds, and beans. Set aside.

For the dressing
In a small bowl whisk together apple cider vinegar, minced garlic, ginger, coconut nectar, sesame oil, pinch of sea salt and black pepper. 

Once all prior steps are completed, toss the salad with the dressing and arrange on a plate. Top with seared tuna and avocado.
