Yummy Apple Pie!

Just in time! As the weather turns crisp and the kids head back to school, its time for you to get cozy and get baking. Here is a classic apple pie recipe to kickoff the fall season and get you started on the right foot. Delicious any month of the year, also perfect to share among friends and family as the seasons turn. 

Sweet Flaky Pastry

Ingredients                Metric
Pastry flour                  250 g
All Purpose flour        125 g
Granulated sugar         15 g
Shortening                    250 g
Cold water                      125 ml

Method
1. Rub shortening into flour until reduced to irregular pea sized crumbs.

2. Dissolve salt and sugar into cold water, add all at once, mix just enough to incorporate. DO NOT over mix. Transfer dough to floured table, shape into a thick roll, cover and allow to rest for a few minutes before rolling.  

Apple Pie

Ingredients                
Metric
Apples (tart)                      6
Sugar                              250 g
Cornstarch                     25 g
Ground Cinnamon        1 g
Ground Nutmeg         1/2 g
Butter                                 8 g

Glaze:1 egg mixed with 1 tbsp water

 
Method
1. On a well-floured surface, roll out one half (the larger) to a 10" circle. Carefully roll up the pastry around your rolling pin and unroll onto a 7" pie plate, leaving a 1/2" to 1" overhang all around. Now, roll out the second half to one 12" circle; place it on a cookie sheet and refrigerate both pie shell and upper crust.

2. Preheat the oven to 350oF. Slice the apples into a bowl. Sprinkle the sugar, flour, cinnamon, and nutmeg over and toss well, until the apples are thoroughly coated. 

3. Pile the apple mixture high on the pie shell and dot with the butter. Brush the egg glaze over the edge of the pastry; this will act as glue for the upper crust. Drape the 12" circle over the filling; Trim the crust so that the edges are even, then tuck them under and crimp decoratively. Using a small sharp knife or scissors, cut small vents in the upper crust (cutting a small apple shape is a nice touch). Brush with remaining egg glaze. 

4. Bake in the preheated oven for 40-50 minutes, until the juices inside are thick and bubbling, and crust is a deep golden colour.
