Fresh snapper cured with citrus juice and chopped with
onions, corn, avocado, and chili peppers.
Wine: Sauvignon Blanc
Risotto Vegetali
Arborio rice with asparagus, artichoke, sweet peas,
carrots, and spring onions slowly simmered in a vegetable broth.
Wine: Chardonnay
Guinea Fowl Agro Dolce
Braised with a sweet and sour sauce of berries, raisins,
pine-nuts, and dark chocolate and served over soft polenta.
Wine: Merlot
Red Wine Braised Short Ribs
With an orange gremolata. Accompanied by grilled radicchio,
roasted parsnips, and carrots then finished with a wine reduction.
Wine: Zinfandel
Panna Cotta
Vanilla custard with fresh berries
