All newly relined with tin, as dictated by tradition.  This is one of the loveliest sets we have had.

Attention Aspiring Professional Chefs.  There is a reason Julia Child had a complete set of these pots. Copper conducts heat quickly and evenly with no hot spots on the bottom of the pan.  The tin lining allows you greater control.  The pans heat up faster and cool down faster when removed from heat.  The result?  Food is cooked to perfection. Bon appetit!

These are the pride of any well stocked kitchen.
Traditionally, re-tinning is very laborious. The inside of the pot is spotlessly cleaned, then molten tin is applied by hand, using a cloth and heavy gloves.
Once re-tinned in this manner, an antique copper pot will have a greater proportionate amount of copper than the new stainless steel lined pots. Depending upon use, re-tinning lasts for decades before the pot needs to be retreated.
