Hi !    

I hope you are getting more sunshine and beautiful weather than we are in Denver! It's been raining non-stop and I'm craving some serious Vitamin D!  

You're probably wondering why the newsletter came a couple of days later than normal this week. Rooted Wellbeing has been busy! Last weekend was spent with some beautiful ladies (and gents) in San Diego for a Holistic Health Practitioners conference. It was intense and incredible... and I was surrounded by beautiful, empowered, vibrant, amazing women.

Then, to top off the week, I launched the first of many cooking classes at Whole Foods (Cherry Creek location). The picture below was taken as I was packing up supplies (my trusty Vitamix!) for the full-house, standing room only, Easing Into Raw Foods class. Despite the gray skies and downpour all day, the class was awesome! Fabulous people, food, and fun. If you're in Colorado, check out the next Divine Desserts Raw Food class coming this June!

 

The raw foods movement has been gaining momentum across the country as it offers many health benefits including increased energy, better digestion, clearer skin, and more. I know it makes a drastic difference in my life when I incorporate even just a little. Try it out...what do you have to lose?

Go on, dabble in Raw Foods...

Raw, live, unpasteurized, life-force... all words used for Raw Foods - the practice of consuming uncooked, unprocessed, and often a large percentage organic foods.  The reasoning behind this way of eating has to deal with enzymes and nutritional value. Research has shown that cooking food above 116 to 118 degrees deactivates the enzymes and changes their structure.  


So why do we care about enzymes? Well these little guys help with everything from digesting your food to detoxification to brain function. 1.     Add your cold-pressed oil AFTER you are done cooking. To keep the goodness of healthy oils, saut� your food in water and add the oil just before serving.

2.     Instead of choosing roasted nuts, choose raw and soak them over night. Soaking nuts in water overnight deactivates an enzyme inhibitor and actually makes the nutrients more available to your body AND easier for your body to digest. Place nuts in a small bowl and cover with water 1" above. Rinse with water in the morning and add to breakfast, salads, or munch on as a snack.

What Is Katie Up To?
RECIPE: Thai "Peanut" Sauce 

 

Ingredients:

  • 1/2 c. almond butter 
  • 1 T. fresh ginger root, peeled (or 1 tsp. ground ginger) 
  • 1 T. lemon juice
  • 1 T. lime juice
  • 2-3 dates (or 3 T. raisins) 
  • 3 cloves garlic
  • 1 T. tamari
  • 2 T. cilantro 
  • 1 serrano pepper, seeds and stem removed (0r 1/2 tsp. dried cayenne pepper) 
  • 1/2 c. water, plus more to thin sauce.  

Directions:

1.       Place all ingredients in blender and process until smooth.  

2.      Spread on sandwich, use as a dip for wraps or veggies, thin with water to make a salad dressing, or use as a sauce for pasta.
