Bill's Carrot Cake Recipe

Leave a piece for everyone's favorite Bunny to guarantee an abundance of tasty Easter treats!

Ingredients

1 can unsweetened crushed pineapple

2 cups shredded carrots

4 eggs

1 cup sugar

1 cup packed brown sugar

1 cup canola oil

2 cups all-purpose flour

1 tsp baking soda

2 tsp ground cinnamon

1/4 tsp salt

3/4 chopped walnuts

 

Directions

 

1. Drain pineapple, reserving 2 tbs juice.

 

2. Beat carrots, eggs, sugars, oil, pineapple and reserved juice until well blended.

 

3. In another bowl, combine flour, baking soda, cinnamon and salt.

 

4. Gradually beat into pineapple mixture until blended.

 

5. Stir in walnuts.

 

6. Transfer to a greased 13-in. x 9-in. baking dish.

 

7. Bake at 350° for 35-40 minutes or until a toothpick comes out clean.

 

8. Cool on a wire rack.

Spring has officially sprung early this year at Gramercy Mansion!  In addition to the early spring daffodils, the magnolias, cherry trees, bridal wreath and Virginia bluebells are in bloom and the tulips are even starting to pop up.

Carriage House Renovations

Carriage House in spring  

Over the winter, we've made improvements to the restrooms in the Carriage House.  One powder room has been added and is fully handicap-accessible, in time for the busy spring wedding season!
