The Gluten & Grain Free Gourmet
The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. The GGF Gourmet ( Jen Cuevas ) experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious!

Just a few short years ago, Jen was ill with a multitude of issues (although not typical "Celiac" symptoms), including high cholesterol, pre-diabetes, sudden weight gain [over 60 pounds], Hashimoto's, and arthritis (read more of her story here).   After more than seven frustrating visits with various doctors, she finally learned about her gluten sensitivity and Celiac disease.  In becoming well, she found that life without gluten was really great from a health perspective, but affected everything else that had a social factor.

In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days ) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After discovering the truth about the gluten content in all grains (and even foods labeled "gluten free"), she went grain  free in 2012, and became certified with Gluten Free Society (under the direction of Dr. Peter Osborne). Her goal is to help others with the knowledge she has gained, while providing resources that are delicious and safe for those who are Celiac or have a gluten sensitivity. She has spent much time researching products, doing restaurant reviews, and most of all in the development of recipes that don't contain gluten, grain, soy, or poultry. She is trained in how to avoid cross-contamination, has personally coached individuals, and given public presentations on the topic.

Recipe

Classic Beef Pot Roast


YIELD: 8-10 servings     |     PREP TIME: 15 minutes
COOK TIME: 2-1/2 hours     |     TOTAL TIME: about 3 hours

INGREDIENTS:

3 to 3-1/2 pounds Beef Chuck Roast*
Kosher Salt
1 tablespoon Olive Oil*
2 onions,* chopped
3 cloves garlic*, smashed, peeled and chopped
1 cup Pinot Noir {dry red wine}
2 cups Beef Broth
4 sprigs of fresh Thyme*
1 bay leaf
1/4 teaspoon coarse Ground Black Pepper
4 carrots*, peeled and chopped into 2 inch pieces
2 pounds small to medium Potatoes*, quartered
Optional: Serve with a loaf of good crusty bread.

DIRECTIONS:

Preheat a large 5 quart {or larger} Dutch oven on medium-high, and add in the olive oil.
Season the chuck roast with kosher salt and sear it on both sides in the hot Dutch for 5-6 minutes a side.
Reduce the heat to medium and add in the chopped onions. Cook until softened about 5-8 minutes. Add in the chopped garlic, stir and cook for 1 minute.
Add the roast back into the Dutch oven and then add in the wine, broth, thyme, bay leaf and black pepper.
Stir and bring to a simmer before covering and popping the roast into a preheated 350 degree oven. Cook for 2 hours. Remove add in the peeled and chopped carrots and quartered red skin potatoes. Cover and place the Dutch oven back into the oven for another 30 minutes.
Remove the roast and either slice or shred {using two forks}. Place the meat back into the pot so it can absorb the juices.

Guarantee Your Egg Nog Purchase!
If you want to guarantee your egg nog purchase, you need to contact the store (phone, email or in person) at least one week prior to when you want it.  Deliveries for Hartzler Dairy are made to the store on Thursdays.  Those customers who request a "hold" for egg nog will have product put aside for them and should ask for it.  All other customer's purchases will be subject to availability.  The egg nog season is short and fleeting - don't let it pass you by.  If you've not tried Hartzler Family Dairy's egg nog, then you don't know what you're missing!

Local Historian Aubrey Brown began selling Cat's Meow Village Keepsakes of the Knox County Infirmary during this year's Christmas Walk as a fundraiser to purchase an Ohio Historical Marker to commemorate the poorhouse.  If you couldn't make it downtown to get yours during the Christmas Walk, you can still get one.  If you simply want to help make the Historical Marker a reality, every dollar is a dollar, and is appreciated.   Learn more...
