Farmers' markets abound with fresh, delicious produce and there is no better time to try out some new simple, seasonal recipes. This month we bring you two super-easy summertime recipes to help celebrate healthy eating without much fuss!  
 
With the warm weather on deck, it's time to get outside with our kids and enjoy the beauty of nature.  You don't have to go far or have grand plans to take in the wonders around you.  We offer 10 fun things you can do to get outside and relish your time in nature!

This year we are offering our Top 10 lists each month to give you simple, practical tips to help live a greener, healthier lifestyle in 2012! 

 

10 Great Ways to Get Outdoors with Your Kids!

The Why:

 

Today's kids are plugged in.  From TVs to video games, smartphones to tablets, kids between the ages of 8 and 18 spend an average of 7.5 hours each day in front of a screen.  Heavy media use in children is not only associated with poor physical health and wellness in terms of lower levels of exercise and higher rates of obesity, but also lower school performance, more behavioral issues, and difficult social adjustment challenges.  With summer in full swing it's time to get your kids and have some outdoor fun.  Whether they are little ones or teens, you can build healthy habits now and for the future.  

 

The How:

 

  1. Start a Garden. Little ones love to play in the dirt and older children can pick a favorite vegetable or fruit to grow and care for.  Gardening requires ongoing outdoors time and will not only help get your kids in nature, but eating healthier too! 
  2. Go Find Some Bugs!  Head outside to catch fireflies at night or grab a magnifying glass and see what bugs you can discover with your little ones.
  3. Take Up Nature Photography.  Enroll yourself and your child in a photography class and learn how to shoot beautiful landscapes, foliage, or wild animals.
  4. Geocache.  Who doesn't love a treasure hunt?  Discover geogaching - the outdoor, real-life treasure hunting game!  
  5. Create a Treasure Table.  Build a spot in your home for nature's discoveries - feathers, shells, acorns, flowers - and enjoy the stories and tales of each as they become their own decor.
  6. Try Out a New Sport.  Take a sample lesson (or two) of a new outdoor sport with your kids.  Archery, sandboarding, kayaking - there are many options to experience something new!
  7. Staycation.  Travel not in your budget?  Map out and conquer all the playgrounds, hiking trails, beaches, or mountains that surround your hometown.
  8. Become a Nature Fairy.  Head outside and make a nature crown of sticks, flowers or whatever you can find.  Build a natural fort or fairy house and let your imagination run wild!
  9. Stargaze. Discover the constellations with sky maps and a telescope.  Learn about the planets, the zodiac, and more!  
  10. Go on a Scavenger Hunt.  Make up a list of natural objects for your little ones to find and head out to see if you can gather them all up.

Join the World's Biggest Breastfeeding Twitter Party!   

Last year, our World's Biggest Breastfeeding Twitter Party was such as success we decided to do it again!  We will work to harness all the power of breastfeeding moms in social media to make #breastfeeding a trending topic on Twitter as we all prepare to celebrate World Breastfeeding Week! Together with our sponsors, Motherlove Herbal Company, Divine Mama Bars, and Earth Mama Angel Baby, we will attempt to make #breastfeeding a trending topic on Twitter during World Breastfeeding Week and help to normalize breastfeeding as the way to feed human babies.  Join us at #HolisticMoms on Tuesday, July 31st 10 pm EST, 7 pm PT and show your support for #Breastfeeding!

SUMMERTIME RECIPES FOR WELLNESS

The following recipes are from HMN's cookbooks, Growing Healthy Families and Many Paths, One Journey to Health.  Order your copies online!  

The summer bounty provides us with great inspiration for dishing up some healthy food for our families. Here are some no-fuss recipes to enjoy for your next summer meal or event!  

Simple Strawberry Pie (makes 2 pies)

(Use your own crust - store bought, homemade, gluten free, grain free - whatever works for you!)


1/2 crate of fresh organic strawberries (6 baskets)
1 1/2 c. organic sugar
4 T. cornstarch
2 pie crusts of your choice

Pre-bake your pie crust.  Crush 2 cups of strawberries and set aside.  Chop remaining berries and place in a large bown.  Mix sugar and cornstarch together and then add to the crushed berries and pour the strawberry mixture into a saucepan on the stove.  Heat on medium-high heat until the mixture becomes clear and thick.  Pour warm mixture over chopped strawberries, combine well and divide into two pie crusts.  Refrigerate until set and serve with your favorite organic whipped cream, ice cream, or enjoy as is!

 

Baked Salmon (we love salmon from Vital Choice and spices from Frontier Co-Op!)

Many Paths From Many Paths, One Journey to Health

Wild caught salmon fillets
Olive oil
Brown sugar
Fresh thyme
Pinch cayenne pepper
Fresh squeezed lemon juice

Set oven to 350 degrees. Place salmon on baking tray and drizzle olive oil over the top, then coat with a layer of brown sugar. Combine chopped fresh thyme with a pinch of cayenne pepper, and sprinkle generously over fish. Drizzle with fresh lemon juice and a little more oil, bake 15 minutes (or broil for a crispier top). Enjoy!
