Recipe: Zucchini Noodles with Ajvar
  
INGREDIENTS 
  • 2-3 small to medium sized Zucchini
  • 1 Onion
  • 6 Cherry Tomatoes or 2 regular sized ones
  • 2 tbsp Greek Yogurt
  • 4 tbsp Ajvar (or tomato paste - if you don't like your food too spicy)
  • Salt & Papper to Taste
  • Fresh cilantro
  • Olive oil

DIRECTIONS 
  1. Chop the onion, dice the tomatoes, and slice the zucchini (or use a spiralizer as I did!)
  2. Sprinkle a little olive oil in a pan.
  3. Heat the pan on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. 
  4. Spread the onions out evenly over the pan and let cook, stirring occasionally.
  5. Add the tomatoes, let them heat up for about 3-5 minutes. Add the Ajvar.
  6. Let cook for another 2-3 minutes, and add the zucchini.

After another 3-5 minutes everything should be heated through. Try, add salt & pepper to taste. Add the greek yoghurt, stir, and it's ready to serve! I usually put some more greek yoghurt on my plate, and add some cilantro to taste.

 What makes it amazing is our current long term members whom, I have personally seen, taking the time to help their fellow man or woman get acclimated into the "new world" of fitness.   This is what makes HealthWorks different. Members like you helping our vision of Building a Healthier Community and for that I say thank you.

  I am very excited to announce our second floor remodel is under way which will include new strength equipment and free workshops brought to you by the Fitness Department. 

  When you see me in the building be sure to say hi or drop me a comment card for any issues you might have.  It takes all of us to make HFC great!
