Chipotle Hummus

Ingredients:
2 (15.5 ounce) cans garbanzo beans, drained
1/2 cup water
1/4 cup tahini (sesame-seed paste)
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 canned chipotle pepper in adobo sauce
2 cloves garlic
1 1/2 teaspoons cumin
1 (7 ounce) jar roasted red bell peppers, drained
6 oil-packed sun-dried tomatoes, drained
1/2 cup chopped cilantro
1/2 teaspoon salt
Ground black pepper to taste

Instructions:
Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth.

Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base.

Transfer to a serving bowl, cover, and chill until ready to serve. Goes great with Pretzel Thins!
Zucchini Fries

Ingredients:
2 zucchini
1 egg white
1/4 cup lowfat milk (soy, rice, almond)
1/4 cup lowfat shredded Parmesan cheese
1/2 cup panko bread crumbs
Pam cooking spray

Instructions:
Preheat oven to 425�.

Cut 2 zucchini into 3-inch sticks. Whisk an egg white in a small bowl, and add milk. Combine shredded Parmesan and seasoned breadcrumbs in a separate bowl.

Dip zucchini sticks into egg mixture, and then roll in breadcrumb mixture.

Coat a baking sheet with cooking spray, and place zucchini on sheet. Bake for 25-30 minutes or until golden brown. 
Black Bean Nacho Pizza

Ingredients:
1 lb lean ground turkey
1 cup canned black beans, rinsed

1/2 cup chopped jarred roasted red peppers
1 medium clove garlic, quartered
1 tablespoon chili powder
1/4 teaspoon salt
1 whole wheat pizza crust
1 cup shredded Monterey Jack cheese
2 medium plum tomatoes, diced
4 medium scallions, thinly sliced
1/4 cup chopped pitted ripe black olives
2 tablespoons chopped pickled jalape�os 
 
Instructions:
Preheat grill to low. 

Cook ground turkey in a skillet until browned.

Place beans, peppers, garlic, chili powder and salt in a food processor and process until smooth, scraping down the sides as needed.


Spread the bean mixture on the whole wheat pizza crust, leaving a 1-inch border. Quickly layer on ground turkey, cheese, tomatoes, scallions, olives and pickled jalape�os.

Bake until the cheese has melted and the bottom of the crust has browned, about 8 minutes.
