Hit the Road, Jack!

Road Trippin' - whether it's the Red Hot Chili Peppers that inspire you, or Ramblin Jack Elliot and Jack Kerouac - it's time for a road trip somewhere along the line. Get inspired as you follow our intrepid travelers Cherie, Dan and Martine, who are enjoying the fabulous Raw Food Revolution Tour of Vancouver, B.C., Toronto, Seattle, and Portland. Keep track of all their latest adventures on Cherie's new blog, "Food for Thought" - complete with photos. A highlight of their trip will be the Total Health Show coming right up April 20-22. Cherie will be a feature presenter - see details in this newsletter. They had wonderful support in Vancouver, B.C. from Living Light grads Agathe Mathieu, Chantale Roy, Jim Maurice, Stephanie Schlosser and other incredibly helpful volunteers. The reception there was gratifying. Here's what Cherie had to say:

Good news - Drs. Rick and Karin Dina have announced the first venue on the Living Light Science of Raw Food Nutrition I Tour: Live Long, Eat Raw, Learn Why. They'll take the fascinating and enlightening one-day intensive course on the science of raw food nutrition to three cities: Seattle, Portland, and Vancouver, B.C. this summer!

If you happen to be staying home, isn't it the perfect time to get your hands dirty in the garden? It's so rewarding. Living Light Café assistant manager Therese Tarnoff and her husband Matt are creating gardens for their first CSA (Community Supportive Agriculture), and many of us are signing up to get great local produce every week - grown with love. Mmmm, I can taste those fresh veggies and fruits already! If you are sticking close to home, it's fun to plan an outing. Here in Fort Bragg, we have the gorgeous Pacific Ocean, the redwood forests, Mendocino Coast Botanical Gardens, and lots of other earth friendly diversions for the coming warmer months ahead. Head for the prettiest spots in your neck of the woods - whether a city park or nearby body of water - it feels so good to be outside again.

Cherie is sharing tips for staying raw on the road this month, along with a delicious recipe for nutrition packed Power Bars to keep you going while you are on the go! Food Styling for Photography

It is said, "Pictures speak a thousand words" and it's true - well plated and designed food photos can do more to build your business and showcase your talent than the most well written description of your foods possibly can. Now you can learn from the experts how to show off your beautifully presented and photographed raw culinary creations on your website, recipe books, and brochures!


This one-day hands-on workshop will focus on the basics of food styling for the media. Students will learn presentation and plating skills, and making foods look stunning through use of color, texture, and contrast. We will explore saucing, building height and movement, how food reacts under the camera, the ins and outs of propping and preparing for a shoot, tricks and techniques for media food, building a portfolio, elements of design for photography, and the importance of negative space.

Several years ago, I made my way to Living Light Culinary Institute. I flew to San Francisco and from Santa Rosa, boarded a comfy little bus, the CC Rider. Winding north through majestic redwood forests, I wondered what lay in store. Would it be weeks of deprivation? The discomfort of plummeting blood sugar levels? Grim hours of chewing on mounds of spinach? Sneaking out for forbidden snacks?

Raw Revolution Diet and Becoming Raw booksOn the bus I met a traveler who also was heading for a raw food adventure at the school. She'd flown from Japan, inspired by Japanese friends who shared their experience at Living Light. Fort Bragg is a charming little town on the scenic Mendocino coast. We found the Living Light Culinary Center, complete with the culinary school, cafe, and marketplace on Main Street, just a few short blocks from the Pacific Ocean.

I had signed up for three courses a knowing that a few weeks of immersion would be required for a shift in dietary habits to take hold. FUNdamentals of Raw Living Foods™ was a day of demos by expert chefs, with plenty of samples - a delicious feast! The food far surpassed anything I had envisioned.

Chef Made RunathaChef Graduate Made Runatha Wows 'em in Bali!

Chef Made Runatha gave a culinary talk and gourmet raw demo for 100 women in government office at Jayasaba. Mistress of Ceremony was Ibu Ayu Pastika, wife of the Governor. Both governor Made Pastika and his wife also enjoyed a private dinner at Fivelements Puri Ahimsa with founders Chicco and Lahra Tatriele. They loved the spectacular raw vegan cuisine prepared by Chef Made Runatha, and plan to have events catered at the beautiful retreat center in Bali, where Cherie Soria gave a workshop last fall.

In the month of March the Living Light family is pleased to pay honor to our Directors, Cherie Soria and Dan Ladermann, as Employees of the Month.  

 

Cherie and Dan's team describe them as extremely hard-working, supportive, caring and the inspiration and creation of a wonderful life.

The Living Light team selected Cherie and Dan as Employees of the Month for many reasons, not only because they were the first employees of Living Light but because of their constant dedication to creating a place of support and love.

The yin and yang of the company, Cherie and Dan go out of their way to uplift not only the business of Living Light but its people.  Some opportunities they offer for staff include, hosting two holiday gatherings a year, one-on-one meetings, free Living Light classes, nutritious and delicious lunches and participation in local events with staff, i.e. the Whale Run.  They carefully balance the professional aspect of the company while making sure there is fun to be had.

They enjoy running in the woods, taking long walks on the beach and foraging for seaweed during low-tide with their canine kids, Rudi and Winkie, and on occasion they invite the neighborhood kids to tag along. They are both dedicated karate practitioners - Cherie has black belts in three different styles and Dan is a brown belt working on achieving his black belt. Cherie and Dan are also huge fans of television cooking shows, the Academy Awards, and Glee. 

Cherie's goals are to have excellent personal health and well being and to increase employee morale to the highest level. Dan's goal is to continue building teamwork within Living Light.

Cherie and Dan have continuously illustrated their hard work, sincerity, perseverance and diligence when it comes to making Living Light a place for health and vitality. We, the Living Light family have taken note of and appreciate their high level of dedication to our success, both professionally and personally.   They both are truly respected, cherished and loved. After learning about the raw food diet and seeing its incredible results, many people are concerned about how they can carry on eating living foods when they are away from home. This easy guide will give you the tools you need to make travel in the raw possible!

It is completely possible to continue eating raw foods no matter where you are or how long you plan to be away. For short trips you will need a cooler, and for longer trips you can even create a simple, inexpensive portable kitchen. Family, friends, business associates, and anyone who happens to be nearby when you open up your portable kitchen will be intrigued to watch you prepare delicious nourishment right before their eyes in only minutes. They will be fascinated and filled with questions as you take out your containers and bags holding delicious fresh fruits and veggies, dehydrated goodies, and other treats to nourish body and spirit. You will be able to participate in all gatherings and feel perfectly comfortable. Here is all you need -

Raw Foods Travel Bag and Picnic Supplies:
  

  • Onewooden flatware soft-sided cooler small enough to meet airline standards if you are traveling by plane.
  • Spoon, knife, fork or chopsticks, and cloth napkins. (If traveling by plane, pack your metal knife and fork in your checked luggage, and carry a small wooden knife and fork in your cooler. Some airlines will confiscate acacia bowlyour chopsticks, so don't take your favorite pair.)
  • Small, flexible plastic chopping mat.
  • Wooden plate and/or bowl.
  • Beverage container with watertight lid.
  • One or more small containers for cereal or snacks.
  • One small leak-proof container for salad dressing.
  • One sealable container for salad.
  • Almond BiscottiSealable plastic bags to hold dried fruit, fresh fruit, and veggies.
  • Hardy greens, like romaine lettuce, for salad.
  • Apples (or other firm fruit with skin).
  • Avocados.
  • Nuts and dehydrated goodies.
  • Favorite seasonings.
  • Tribest Personal BlenderPlastic bags for trash and compost.
  • Place mat.

Travel Bag for Longer Trips (in addition to the above):

Pure Power BarsPure Power Bars
Yields 64 bars (32 servings)
 
These tasty, power-packed bars make a great midmorning snack or travel companion. Don't be put off by the fact that they contain sea vegetables. If anything will make you fall in love with sea vegetables, this could be it! If they are to be used as a travel snack, they can be dehydrated, or eat them as is-soft and chewy.
 
Nutrition Note
These delicious bars are filled with calcium-rich seeds and have many nutrients that tend to be hard to obtain, like iodine, selenium, and zinc. The dulse in this recipe provides your day's supply of iodine in a serving (2 bars). However, if you have another source of iodine, such as iodized salt or a supplement, you can omit it and still have an excellent, nutrient-rich bar.
 
3 cups (750 mL) chopped figs
3 cups (750 mL) warm purified water
1 cup (250 mL) almonds, soaked for 8 hours, rinsed, and drained
1 cup (250 mL) Brazil nuts, soaked for 8 hours, rinsed, and drained
1 cup (250 mL) walnuts, soaked for 3 hours, rinsed, and drained
3 cups (750 mL) sesame seeds, soaked for 3 hours, rinsed, and drained
1 cup (250 mL) pumpkin seeds, soaked for 3 hours, rinsed, and drained
1/4 cup (60 mL) dulse flakes
2 tablespoons (30 mL) ground cinnamon
1 1/2 cups (370 mL) ground flaxseeds
1 cup (250 mL) dried blueberries
1 1/2 cups (370 mL) agave syrup

Directions
  1. Soak the figs in the warm water for 20 minutes. Transfer the figs and their soaking water to a blender and process into a paste.
  2. figs
  3. Add the sesame, pumpkin seeds, dulse, and cinnamon and pulse briefly. Do not overprocess; the mixture should have bits of seeds visible.
  4. Transfer the mixture to a large bowl. Add the flaxseeds and blueberries and stir well. Stir in the agave syrup, mixing until it is evenly incorporated.
  5. Dehydrating the bars is optional. To dehydrate them, spread 6 cups (1.5 mL) of the mixture evenly on each of 2 dehydrator trays lined with nonstick sheets, and carefully score each one into 32 bars. (Score into 4 long strips in one direction and 8 strips in the opposite direction, forming 32 rectangular bars.) Using a second dehydrator tray without a nonstick liner, flip the tray over and remove the nonstick sheet to allow complete airflow. Dehydrate at 105 degrees F/40 degrees C for 18-24 hours.
Stored in a sealed container in the refrigerator, dehydrated Pure Power Bars will keep for up to 2 months; if the bars are not dehydrated, they will keep for up to 2 weeks.
 
Variation: For a chunkier texture, chop the walnuts and add them with the flaxseeds and blueberries.
