Dear Friends,

Happy New Year!  We hope that the upcoming year holds much happiness, and of course, good health for you.  We are really excited about the opportunities that await Beyond Boobs! in 2013.   Helping us this year is the latest addition to Team BB!, Keesha Wells-Croom.  In the newly established Program Manager position, Keesha will be responsible for strengthening and expanding our support and education programs throughout the state and beyond.  A Boober! who graced the

cover of A Calendar to Live By 2012, Keesha brings to our organization a Master's Degree in Project Management and years of valuable work experience.  She and her husband, Quentin, are the proud parents of four children - three girls and one son - aged 2 to 14.  We are also glad to have all of you on board as we gear up for our best year ever!

46, diagnosed at 45, No Immediate Family History

 

 Assistant preschool teacher, Navy wife, and mother of two teens, Stephanie noticed her breast swelling literally overnight.  It took two weeks to get an appointment, but within two hours of seeing a doctor, Stephanie was getting diagnostic tests.  Three weeks later she began treatment for inflammatory breast cancer (IBC) including chemotherapy, mastectomy, and radiation.  Now cancer-free, she is on hormonal therapy to reduce her recurrence risk.  The advocacy skills learned from helping a son with special needs -  networking, listening, questioning, researching - helped Stephanie find her voice during her cancer journey.  She is using her story to educate others about IBC, an aggressive, often misdiagnosed form of breast cancer.  While she no longer has her bald head with bold designs of henna and glitter as a conversation starter, she doesn't need it.  Stephanie is not hesitant to use her voice to share her life-saving message.

Breast cancer risk reduced 30 percent in women who exercise 10 hours per week

(From CBS News) Women may significantly reduce their risk for breast cancer by exercising a couple hours each day, a new study finds. The study found that even mild physical activity like walking reduced risk for the disease that strikes 227,000 new women each year. For the study, researchers at the University of North Carolina at Chapel Hill compared 1,500 women with breast cancer to more than 1,550 women without breast cancer who were part of the ongoing "Long Island Breast Cancer Study Project" that looked at environmental causes of the disease. A healthy and tasty SOUP for you!

 

Golden Potato and Cauliflower Soup

 

Ingredients

Croutons:

  • 1 teaspoon ground cumin
  • 1 teaspoon olive oil 
  • 1 cup cubed French or Italian bread

Soup:

  • 2 teaspoons olive oil
  • 1/3 cup finely chopped shallots
  • 1/3 cup finely chopped celery
  • 2 1/2 cups sliced cauliflower (about 1/2 small cauliflower)
  • 3/4 pound sliced peeled Yukon gold potato
  • 2 (14-ounce) cans fat-free, less-sodium vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 teaspoon lemon juice
  • 2 teaspoons chopped chives (optional)
 

Preparation

1. Preheat oven to 350�.

2. To prepare croutons, combine cumin and 1 teaspoon oil in a bowl; add bread cubes, and toss to coat. Spread bread cubes on a baking sheet. Bake at 350� for 10 minutes or until golden. Cool croutons slightly; set aside.

3. To prepare soup, heat 2 teaspoons oil in a large saucepan over medium heat. Add shallots and celery; cover and cook 2 minutes. Stir in cauliflower, potato, broth, salt, and pepper; bring to a boil. Reduce heat, cover, and simmer 15 to 20 minutes or until vegetables are tender. Add lemon juice. Place vegetable mixture, in batches, in a food processor; process until smooth. Divide soup evenly among 4 bowls; serve with croutons, and top with chives, if desired.
