It's Grilling Month and your Summertime Chillin and Grillin specials are here with a brand new item to really kick things off! Really this is something we should have concocted a long, LONG time ago, it just makes too much sense. Bacon is good. Shrimp is good. Oysters are good. All three together? Just the logical choice. We put together some batches of these last week and they flew out the door immediately!
Preparation is a cinch with these appetizer items too. Just throw them on the grill until the bacon is cooked, once the bacon ready, you're ready. Each Bacon Wrap (we really need a catchy name for these) comes complete with a slice of jalapeno pepper in it as well as a chunk of cream cheese that will melt nicely as it's cooked.

Grilled Honey Key Lime Glazed Swordfish
|
|
Ingredients
4 six-eight ounce Swordfish Steaks
Approximately 3 Dried Chili Pasilla
Approximately 2 Dried Arbol Chilies
3 Tablespoons of Olive Oil
4 Ounces of Key Lime Juice, Fresh Squeezed (About 13-15 Key Limes)
3 Cloves of Garlic, Whole
1 Ounce of Honey
½ Bunch of Cilantro
2 Ounces of Brown Sugar
Kosher Salt and Black Pepper to taste

Instructions:
1. Cut Stems off the two types of chilies and remove as many seeds as you can. You
can cut the larger Pasilla Chilies in halves or thirds. Boil in small pot of salted
water for ten minutes or until soft. Drain saving the softened chilies and reserve
the water. Take off any other exposed seeds that have appeared.
2. Place chilies, olive oil, key lime juice, garlic, honey, cilantro, brown sugar, and a
bit of kosher salt and cracked black pepper in a food processor and pulse until well
mixed and blended. If the mixture is too clumpy, add a bit of the reserved chili
water.
3. Spread half of the mixture on all sides of the swordfish steaks to where the fish is
well coated but not swimming in the glaze. Place in the refrigerator in a covered
container for 1-3 hours to allow the flavors to intensify. Save the remaining portion
of the glaze for basting while grilling.
4. Brush oil on grill grates to keep from sticking and turn heat to medium. Grill
Sword steaks for about 8 minutes flipping halfway through or whenever grill marks
appear. Baste while cooking with reserved marinade. Cooked medium the internal
temperature should be approximately 135 degrees. Serve with your favorite
summer vegetables or corn. Enjoy!!

Grilled Honey Key Lime Glazed Swordfish

Instructions:
- Mix all marinade ingredients and pour over salmon. Marinate for 1 hour. Place fillets over medium hot coals.
- Grill for 3 to 4 minutes on each side
- Remove and serve!

Grilled Tuna with Herb Aïoli
|

Ingredients
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons chopped fresh basil
- 2 teaspoons chopped fresh thyme
- 2 teaspoons dried tarragon
- 2 large garlic cloves, finely chopped
- 1/3 cup mayonnaise
- 4 7-ounce tuna steaks (each about 1 inch thick)

Instructions:
- Whisk together first 6 ingredients in shallow dish for marinade. Place mayonnaise in separate small bowl. Whisk in 1 1/2 tablespoons marinade. Set aioli aside.
- Sprinkle fish with salt and pepper. Place fish in marinade in dish, turning to coat evenly. Marinate 1 hour at room temperature, turning fish occasionally.
- Oil grill rack. Prepare barbecue (medium-high heat). Grill fish to desired doneness, about 3 minutes per side for medium. Top fish with aioli and serve.

Ingredients:
1/2 cup butter, melted
3 tablespoons lemon juice
2 teaspoons chili powder
1 teaspoon ground ginger
1/4 teaspoon salt
2 pounds uncooked shrimp (16-20 per pound), peeled and deveined

Instructions:
- In a small bowl, combine the first five ingredients; set aside 1/4 cup. Thread shrimp onto eight metal or soaked wooden skewers.Grill shrimp, covered, over medium heat 3-5 minutes on each side or until shrimp turn pink, basting occasionally with butter mixture. Remove from grill; brush with reserved butter mixture.
- Serve and enjoy!
