Meatloaf Muffins

 

meatloaf muffins
Makes 12 Muffins
(2 muffins = 1 serving)
 

Ingredients:

teaspoon olive oil

  • 1 cup diced onion

  • 1/2 cup diced carrot

  • 1 teaspoon dried oregano

  • 2 garlic cloves, minced

  • 1 cup low-sugar ketchup, divided

  • 1 1/2 pounds ground beef or turkey, extra lean

  • 1 cup bread crumbs or panko bread crumbs

  • 2 tablespoons Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • 1/4 teaspoon ground pepper

  • 2 large egg whites

  • Cooking spray

 

Instructions:

Preheat oven to 350 degrees.

 

Heat olive oil in a large nonstick skillet over medium-high heat. Add diced onion, carrot, dried oregano and garlic; saut� two minutes. Cool. 

 

Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl. 

 

Spoon meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. 

 

Bake at 350 degrees for 25 minutes. Let stand five minutes. 

 

This recipe is easily doubled, and makes great lunch leftovers as well.
