Peanut Butter Banana Protein Muffins
Makes 12 muffins
INGREDIENTS:
12 egg whites
2/3 cup oat bran
2/3 cup old fashioned oats
2 mashed ripe bananas
1/2 cup almond butter
dash of vanilla
6 packets of Truvia (optional)
1 tsp baking soda
1 tsp baking powder
1/4 cup 60% dark chocolate chunks
INSTRUCTIONS: Preheat oven to 350 degrees.
In one bowl, mash the bananas, then add the almond butter and vanilla and mix well. In a separate bowl, mix together all the dry ingredients. Add dry ingredients to banana mixture and stir until just mixed.
Add 12 egg whites on top of banana mixture and then use beaters to mix all ingredients together well. Lastly add chocolate chunks and stir in.
Fill 12 sprayed muffin cups. Bake at 350 degrees for 25-30 minutes depending on how brown you like them.
