The Central Coast Chardonnay is a golden straw color and displays aromas of apricot, apple, and honeydew with subtle notes of butter. On the entry, tropical fruit notes with green apple flavors that are framed by nice acidity which integrates well with the medium body mouthfeel. The green apple and pear finish with juicy acidity which provides a lengthy finish.

Vita Sana Welcomes Summer Nights Back for a Summer Full of Great Bands!

Come Join Us for a Great Night of Music, Food, Beer, and Fun Activities for the Entire Family! 
As always don't forget that Summer Nights is a FREE event for all ages. Come join the fun! There's no better way to experience the vibrant nightlife of Rapid City, SD!
The event occurs every Thursday during the Summer from 6:00pm - 9:00pm in the heart of downtown Rapid City, SD. Vita Sana will stay open during Thursday, Summer Nights until 8:00pm.

Olive Wood Smoked
Grilled Halibut

Ingredients  ( Sold at Vita Sana )
  • 1/4 cup VS Olive Wood Smoked Olive Oil
  • 2" Sprig fresh rosemary, coarsely chopped
  • 1 tablespoon medium coarse VS Himalayan Sea Salt
  • 1 teaspoon fresh ground Hickory Smoked Pepper
  • 2 medium fresh lemons quartered
  • 2 pounds fresh halibut fillets about 8 oz. portions - (or your favorite fresh fish such as salmon, cod, squid, or octopus. VIta Sana recommends Dakota Seafood Company for all your seafood needs! Not into fish? Use poultry such as chicken breasts or thighs. Not consuming animal products? No problem, get out your cauliflower or eggplant!) 
Put the rosemary,  VS Himalayan sea salt, and  Hickory Smoked pepper into a small zip bag. Close the bag and crush it a few times between your palms. This will season the salt with rosemary. 

In a large container with a lid, place the fillets. Sprinkle with the rosemary sea salt and gently massage to coat evenly. Add the  VS Olive Wood Smoked Olive Oil
 and massage again to coat evenly. 

Marinate for about 30 minutes or up to 1 hour.

Grill the fish, skin side down, over medium, indirect flame, flipping after about 4 minutes. Pull the fish off the heat source just before it's done, allowing it to rest, loosely covered in foil for a two minutes before serving. This will allow your fish to cook through from the residual heat as opposed to becoming overdone on the exterior. 

Serve with lemon wedges and enjoy!

  • 4 oz  dry chardonnay wine
  • 2 oz  cranberry juice
  • 1 oz  triple sec (or simple syrup)
  • 4 oz lemon-lime soda
  • 1 orange (or lemon or melon)
  1. Pour the Chardonnay into tall wine glasses
  2. Add triple sec (1/2 oz can be added for less alcohol) and stir
  3. Top off the glasses with both the cranberry juice and lemon-lime soda
  4. Stir again (if desired)
  5. Add orange slice (giving a gentle squeeze first) decoration
Linguine with Hot Peperoncino by Morelli: Organic
Hot pepper powder is blended with durum wheat to give these Tuscan Linguine a deep red color. The pasta is delicately spicy, but if you like HOT, serve it with an arrabbiata tomato sauce.
