June Recipe of the Month:
Proscuitto Wrapped Asparagus
This simple recipe is great for a summer appetizer and a great way to use your fresh asparagus. Prosciutto is a dry-cured Italian style ham with a unique flavor.

Ingredients (adjust quantities as needed):
  • 1/2 lb. thin sliced Prosciutto from Louie's deli, cut in half
  • 1 lb. fresh Asparagus, trimmed and washed
  • 1 Tablespoon Olive Oil
Directions: 

1. Wrap a halved Prosciutto slice on each asparagus spear at an angle, covering the length of the spear. Repeat until all asparagus and Prosciutto is used. 

2. Heat olive oil in a large skillet over medium heat. Add asparagus and cook until the prosciutto is crisp and asparagus is tender (about 3 minutes). Alternatively, lightly coat asparagus with olive oil and cook on the grill with medium heat, until prosciutto is crisp and asparagus is tender.

3. Serve immediately as an appetizer.
