Imagine you are arriving at your first math class of the semester. You try to find a seat as students filter in and the final bell rings. Immediately the instructor introduces themselves, laying out their expectations and handing out the syllabus. Asian Leek And Mushroom Soup
 Ingredients

1   Large Stock Pot
1   Tbsp  Extra Virgin Olive Oil
1   1/2  Cup Leeks, White And Light GreenParts       Only, Sliced And  Thoroughly Washed
2    Garlic Cloves Finely Minced
1   Tbsp Fresh Ginger, Grated
1  1/2  Cups Shitake Mushrooms Destemed  And                Sliced
4 1/2 Cups High Quality Stock Of Choice
1  Tbsp Soy Sauce Or Tamari
6   Oz. Firm Tofu, 1/2" Cubes
3   Scallions Sliced
3   Tbsp Cilantro  Roughly Chopped   

Directions

1.  Pre-Heat Large Stock Pot To Medium, Add The Olive Oil Quickly Followed By The Leeks, Garlic, And Ginger, Sauce 1-2 Minutes

2.  Add The Mushrooms And The Stock, Bring Up To A Simmer For 1 Minute, Add The Soy Sauce, And ToFu And Simmer An Additional Minute.

3.  Garnish With The Scallions, And Cilantro, And Serve Hot.

Recipe Serves 6
Consider Serving As A First Course To Your Stir Fry

Lutein+Zeaxanthin  =  516 mcg
Vitamin B6  =  10% dv
Zinc  =  5% dv
