You can learn how during these BBQ smoker cooking classes. Suited for backyard BBQ enthusiasts, seasoned competitors and those considering a BBQ business, this class will cover the basics of barbecuing Brisket, Pork Butt, Pork Ribs, Chicken and Sausage.

Cooking Tips from Ben Lang
Dry hard wood of any kind, when burned, hot will create a "clean" smoker cooking experience. This occurs when the wood in the box turns to ash and the coals and embers are doing the cooking, not the smoke. Clean hot temperatures will caramelize and brown your meat, chicken, fish and vegetables to a beautiful mahogany color, rather than smoke it up. This helps you avoid a bitter, offensive smoke taste.
Fruit woods add to the sweetness of the flavor and when burned green (unlike dry hard woods) tend to be sweetest. They also work best when used with a base of hardwood burned to coals.
Always run your wood burning smokers hot and clean so that you get the results you desire at whatever temperature you chose. Coals and embers will hold their heat for about 40-50 minutes before you need to add another stick of wood. This ensures a subtle smoke flavor and beautifully cooked picture-perfect food every time.

Presented by BULL, this "ultimate fan experience" will take place in Las Vegas during "The Week Vegas Goes Country" in conjunction with the American Country Music Awards. The competition and many other attractions make this a full BBQ experience.
Lang will showcase two new production models for 2012: the 48" hybrid and the 60" deluxe long neck chargrill. Make sure you visit our display located in the competition area. Plus, Chef Paul Kirk and Bill Davis of Hickory Bar & BBQ will be featured in cooking demonstrations. Take notes!
As a special treat, the Lang Team, directed by chief cook Brad Kay will be cooking up "Beef Sliders" for a VIP party of ACM executives and sponsors, plus Country Music personalities. We'll be cooking 25 briskets, provided by Creekstone Beef, on a 84" Deluxe with hickory wood. Get the recipe!
Sanctioned by the Kansas City Barbeque Society, the Throwdown will attract top competitors on the barbeque circuit competing for a guaranteed purse of $50,000 -- one of the world's richest contests.
