Weekend Frittata


A good breakfast is an important part of every day, but when the kids are home from school or you have family & friends in town for the holidays, why not whip up a little something special instead of the same old quickie breakfasts you whip up when you're rushing through the regular daily grind! This delicious frittata that we found on, works perfectly as a breakfast on its own, or add some mixed greens on the side to make it a great brunch or lunch!



1 slice of bacon

2 shallots, minced

1 small Yukon gold potato, sliced thin

� tablespoon olive oil

� tablespoon butter

5-6 eggs

Sea salt

Freshly ground black pepper

Parsley, minced


Preheat oven to 350˚F.


In a frying pan, cook bacon until crispy.  

Remove bacon from the pan, dice & set aside.


Saut� the shallots in the bacon fat & season with a pinch of sea salt. Remove shallots from the pan. Add the potato, season with sea salt & pepper, and cook in the bacon fat until lightly browned. Remove potato from the pan & discard remaining bacon fat.


Heat � tablespoon of olive oil & � tablespoon of butter in an oven-proof frying pan. Add eggs & thyme and cook until slightly thick. Add saut�ed shallots & potatoes into the egg mixture. Top with chopped bacon pieces.


Place frying pan into the oven for 10-15 minutes. Garnish with minced parsley.
