It was a great group of singers and a pretty full audience including a party of 20 that JOHN EDMONDS got together. We started off with TERRY LARSON who was making his first appearance with us - at least for Applause Wednesdays and sang "I Left My Heart In San Francisco" & "My Favorite Year", speaking of "My Favorite Year", Michele Brourman who wrote the song and many others, will be returning again to the Sundays In Summer Cabaret Series July 26th. Next we had LINDSAY OUELLETTE with "As Time Goes By", On The Street Where You Live" & "Soon It's Gonna Rain", then we had ROFE CORRELL to sing "It's Alright With Me" & "Some One Like You", followed by GEORGE LEWIS who sang "Maybe This Time" & "No Arms Can Ever Hold Me" and JEAN SORF who sang a wonderful medley using "My Man", "Bill", & "Can't Help Lovin Dat Man Of Mine" and later "Night & Day". Our next four singers are all College Of The Desert Music students where JOEL BAKER is the rehearsal pianist, starting with ANTHONY TRAN who's developed his Falsetto or Counter Tenor voice since we last heard him at Blame It On Midnight, and got everyone's attention singing "Come And Trip It" & "Verdro Con Mio Deletto", the ANDIE with "My Funny Valentine", DANIEL GUTIERREZ singing "Our Love Is Here To Stay", "The Impossible Dream", & "You're Nobody Till Somebody Loves You", and then it was RAMON who sang "Proud Of Your Boy", "I Am What I Am" and at Joel's request "My Unfortunate Erection" from PUTNAM COUNTY SPELLING BEE. The wonderful NONI LAMBERTSON was our next singer who did "Till There Was You" then gave up her other song asking me to "Old Friend", TERRY GALLAGHER is still in the desert from Seattle and sang "I Will Always Love You", "And The World Goes Round", & "Sister", JASON HULL came to sing "Get Here When You Can", "All Or Nothing" & "Somewhere In The Night", MARGE HARRIS also came by after rehearsals for THE SECRET GARDEN at Palm Canyon Theater, and sang "Before The Parade Passes By" and arriving really late was DONNY TEETERS doing a great job singing "Have You Met Miss Jones" & "Hold Me". I hope you will all be there this week and don't forget to tell your friends to come too.  See you Wednesday.        
WHAT HAPPENED AT AJ'S ON SATURDAY: 
Oddly, we once again had fewer singers but it was sure quality over quantity including the terrific RICHARD BERENT who came from LA to fill in for Wayne on the piano, and he'll be there again this Saturday. We also had TIBOR LASKO with us on the upright bass which is always a treat. We also had a party of 12 that came for a birthday dinner and stayed the whole evening and later told me they didn't know we were there and were blown over by the caliber of talent that comes to sing with us, which included FRED MILLER doing "I Only Have Eyes For You" & "Don't Blame Me", then we were fortunate to have two former stars from the Palm Springs Follies with us starting with ROSANNE HOPKINS who sang "If He Walked In To My Life", "You Made Me Love You", "Hard Hearted Hannah" & "Masquerade". DOUG GRAHAM always loves to come and sing with Richard who also would play at Open Mic Tuesdays at the Gardenia in LA for him and me and so many others, this time Doug sang "Almost Like Being In Love", "The Man That Got Away", "Body And Soul", & "My Romance", and next we had PAT MCCANN who sounded like she and Richard had rehearsed for hours because it was magic during "I Didn't Know What Time It Was", "Angel Eyes", "Every Time We Say Goodbye", RUSSELL GREMILLOT has not been to sing for a while but brought friends to hear him do "Till The Real Thing Comes Along" & "Bennies From Heaven" and TERRY GALLAGHER joined us again and sang "And All That Jazz", "He Touched Me", & her parody of "Memory" was a big hit. Our other PS Follies Gal, VICKI KNIGHT was also there to sing "Kratchma", "Can't Help Lovin Dat Man", "Ordinary People" & "Serento". She also highly complemented Richard and his skills on the piano which was met by great applause and cheers. Vicki was with a party of 8 that included ANTHONY SHANE who, with a lot of coaxing got up to sing "Fly Me To The Moon". By The Way, he'll be headlining at SUN CITY with a full orchestra on March 5th. So that was everyone and that is also what you missed if you were not there - so come this Saturday and enjoy a great show and great food.

RECIPE OF THE WEEK
 
 
SALTED CARAMEL TRUFFLE TRIANGLES
 

INGREDIENTS:

Cookie Base:

1 pouch (1 lb 1.5 oz) Betty Crocker? double chocolate chunk cookie mix
1/4 cup butter or margarine, melted
2 tablespoons water
1 egg
2/3 cup pecans, coarsely chopped

Caramel Topping:

4 tablespoons butter
1 bag (14 oz) caramels, approximately 50 caramels
1/4 cup heavy cream
1/2 teaspoon vanilla
1/8teaspoon coarse kosher salt, plus additional 1/2 teaspoon for top of bars

DIRECTIONS:
Heat oven to 350�F. Spray 9 x 13-inch pan with cooking spray.

In medium bowl, stir together cookie mix, butter, water and egg until soft dough forms. Press dough evenly into prepared pan, sprinkle with 1/3 cup pecans. Bake 11 to 15 minutes or until set in center and edges just begin to pull from sides of pan. Set aside to cool.

Meanwhile, in medium saucepan over medium-low heat, melt butter, caramels and cream, stirring frequently until mixture is smooth. Remove from heat. Stir in vanilla and 1/8 teaspoon salt.

Spread caramel evenly over cookie base and sprinkle with remaining pecans. Cool completely. Sprinkle top of caramel with additional salt right before serving. To serve, cut into 4 rows by 6 rows and cut each square diagonally into triangles. Store in refrigerator; bring to room temperature before serving.
