Giant Caesar Sandwich

1 (12-inch) Foccacia round
4 slices smoked turkey slices
4 slices provolone cheese slices
1 tomato sliced
3 Romaine Lettuce Leaves
1/4 cup creamy Caesar Salad Dressing (recipe follows)

1. Slice Foccacia in half, horizontally.
2. Layer turkey, cheese, tomato, and lettuce on bottom slice of bread. 
3. Just before serving, evenly spread dressing over lettuce.
4. Top with other slice of bread. Cut into 8 wedges.

Creamy Caesar Salad Dressing

3/4 mayonnaise
1/4 cup olive oil
1 Tbls. fresh lemon juice
4 cloves garlic, crushed
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

1. In a jar with a lid, add all ingredients.
2. Secure lid and shake to blend.
3. Refrigerate, covered, until ready to use.
About Shauna:

Shauna Evans was born and raised in northern Utah beneath the Wasatch Mountains. At the age of five she stared experimenting in the kitchen. She has been creating recipes for family and friends ever since. She has won over ten recipe contests, including first place nationally with Bombay Butter Chicken for Dream Dinners, second place nationally with General's Barbecue Chicken Skewers for Barbecue Lovers, as well as top place with Chicken Coconut Curry for B98.7 and SelectMed's Healthy Recipe contest. 

 

Shauna graduated from Brigham Young University with a bachelor of science in nursing. She married Joe Evans, BYU backup quarterback to Ty Detmer, in 1992. They have five active, accomplished children. Shauna is a certified personal trainer and road runner, and she continues her nursing education in subjects regarding nutrition, exercise, and overall good health.
