Chunky Almond hummus
 
 
  
"With the kids going back to school Mom's everywhere are looking for healthy snacks to serve after school.
This nutty hummus is great with carrot sticks, jicama sticks, and crackers."

 

Recipe takes advance preparation.
Ingredients:
1-1/2 cups almondS
1-1/2 cups water, for soaking
1 lemon
1 clove garlic
1/4 teaspoon cumin
1/2 teaspoon sesame oil
1 tablespoon olive oil
1/2 cup water
Big pinch Celtic Sea salt
Directions:
1. The day before you want to make this dip, place the almonds in a medium sized bowl and add the water. Cover the bowl with a tea towel, place the bowl in the fridge and leave nuts to soak for at least 8 hrs (it's best to soak them over night).
2. Strain the soaked almonds and then put them into the food processor.
3. Juice the lemon and add the juice to the food processer.
4. Peel and roughly chop the garlic and add to the food processor.
5. Add the cumin, sesame oil, olive oil, water and oil.
6. Proess the ingredients for at least 30 seconds, until you have a nice mushy, fully blended dip.
Mommy tip: Chunky Almond Hummus is also a great sandwich spread. Include sliced cucumbers and lettuce in the sandwich for an extra crunch!
