Seared Salmon
with Green Peppercorn Sauce

Why not be romantic all February long (or all year long for that matter!)?!  Salmon is so good for you and this easy recipe will have you and your loved one feeling good from both the food and from the company... Serve it up with some sauteed greens and mashed sweet potato to enjoy a fully balanced meal!  We love this recipe we found on!
Ingredients (serves 2):
  • 8-10 ounces of salmon filet, skinned & cut into 2 portions
  • 1/8 teaspoon of salt
  • 1 teaspoon of canola oil
  • 1/8 cup of lemon juice
  • 2 teaspoons of unsalted butter, cut into small pieces
  • 1/2 teaspoon of green peppercorns in vinegar, rinsed, crushed with the side of a knife
Sprinkle salmon pieces with 1/8 teaspoon of salt.

Heat oil in a small non-stick skillet over medium-high heat.  Add the salmon & cook until just opaque in the center, gently turning halfway (4 - 7 minutes total). Remove salmon from pan.

Remove pan from heat and immediately add lemon juice, butter & peppercorns (and maybe a pinch more of salt if you desire).  Swirl the pan carefully to incorporate the butter into the sauce.

Top each portion of fish with the sauce... Et Voila!  Bon Appetit!!!
