We're honored to be playing a role in the  
American Cancer Society's Diamond Ball Fundraiser 
by donating some of our services to their silent auction!

The American Cancer Society, one of the nation's oldest & largest voluntary health organizations, will host the Diamond Ball on Saturday, March 8, 2014, at The International Polo Club Palm Beach, Wellington, Florida. The Diamond Ball is a premier event & one of the most anticipated balls of the Palm Beaches.  Last year, this unique charity fundraiser collected more than $165,000 - proceeds that provide education & patient services within our local community and vital assistance in continuing research programs dedicated to diminishing these most dreadful diseases.

Seared Salmon
with Green Peppercorn Sauce
(FOR TWO!)

Why not be romantic all February long (or all year long for that matter!)?!  Salmon is so good for you and this easy recipe will have you and your loved one feeling good from both the food and from the company... Serve it up with some sauteed greens and mashed sweet potato to enjoy a fully balanced meal!  We love this recipe we found on eatingwell.com!
 
Ingredients (serves 2):
  • 8-10 ounces of salmon filet, skinned & cut into 2 portions
  • 1/8 teaspoon of salt 
  • 1 teaspoon of canola oil
  • 1/8 cup of lemon juice
  • 2 teaspoons of unsalted butter, cut into small pieces
  • 1/2 teaspoon of green peppercorns in vinegar, rinsed, crushed with the side of a knife
Sprinkle salmon pieces with 1/8 teaspoon of salt.

Heat oil in a small non-stick skillet over medium-high heat.  Add the salmon & cook until just opaque in the center, gently turning halfway (4 - 7 minutes total). Remove salmon from pan.

Remove pan from heat and immediately add lemon juice, butter & peppercorns (and maybe a pinch more of salt if you desire).  Swirl the pan carefully to incorporate the butter into the sauce.

Top each portion of fish with the sauce... Et Voila!  Bon Appetit!!!
