Motherhood

May is a Month where we take time to honor Mothers for all that they do.

"The responsibility of a mother, when it comes to influencing inspiring her children, cannot be underestimated. There is much truth in the saying that there is a strong woman behind every successful man. Wherever you see you happy, peaceful individuals; where ever you see children endowed with noble qualities and good disposition; wherever you see men who have immense strength when faced with failure and adverse situation; wherever you see people who possess a great measure of understanding, sympathy, love, and compassion toward the suffering, and who give of themselves to others you will usually find a great mother who has inspired them to become what they are."   - Sri Mata Amritanadamayi Devi

Mother's have such a vital role in shaping the future. As a Woman, and as a Mother we tend to look after all of those around us and forget that we too need to be happy and healthy in order to do all we do! So instead of looking for our loved ones to make this one day out of the year all about us, lets look at ways we can empower and nurture ourselves everyday.

3 Ways to stay Healthy and Happy Mothers!

1. Proper Nutrition: We often spend time making sure our families are fed well and then forget to nourish ourselves. One of the biggest struggles a Mother can have is getting her picky eater to eat well. Children mimic everything we do. By paying attention to the food you are choosing to eat you not only take care of your own health but you are planting a seed for theirs.

2. Exercise: Movement not only helps with energy but exercise helps to release endorphins to enhance mood. Contractions of small and large muscle groups gets the lymphatic system moving which allows the body to get rid of toxins. So grab your kids, put on some music and dance!

3. Speaking your Truth! Mommy guilt has a funny way of controlling many of the decisions we make for ourselves. By tuning into what really makes you happy whether its art, music, dance or a nice walk with a friend...do it! It can be easy to shut down what you want for yourself thinking you're doing the right thing for your family. Doing what makes you happy will give you more energy and motivation to be completely present with your partner and your children.

The essence of motherhood is not restricted to women who have given birth; it is a principle inherent in both women and men. It is an attitude of the mind. It is love - and that love is the very breath of life." - Amma

  • 325 g (approx. 1C) brown sugar

  • lemon

  • 1C milk

  • zest of 1 orange

  • 2 pieces fresh ginger, finely chopped

  • 1 large free-range egg

  • 100 g (approx. 1/2C) butter, plus 1 tablespoon extra, melted

    300 g (approx. 1C) rhubarb, finely chopped
*You can Replace the Flour with a Gluten Free Flour

Method

Preheat the oven to 180C/350F/ and line a muffin tray with muffin cups.

In a large mixing bowl place the flour, baking powder, salt and 225g of the brown sugar. Mix, then make a well in the centre.

Squeeze a few drops of lemon juice into the milk and set aside for a couple of minutes. Place the orange zest, half the fresh ginger, the egg, 100g of melted butter and the milk mixture into the bowl and beat thoroughly. Fold in the chopped rhubarb. Spoon the mixture into the muffin cases, filling each one to the top.

In a small bowl place the remaining 100g of brown sugar, the extra tablespoon of melted butter and the rest of the stem ginger. Mix until it looks like a crumble topping, then sprinkle over the muffins.

Bake for 25 minutes so the sugar turns golden and crispy and the muffins are cooked through.
