RECIPE

This recipe is amazing!!! It's simple, delicious and great for serving company! The recipe serves 6 and perfect over rice!
SLOW COOKER THAI PEANUT CHICKEN
2 lbs. boneless, skinless chicken breasts
1/4 c. fresh cilantro
1/2 tsp garlic powder or 2 garlic cloves
1/2 tsp ground ginger
2 tbsp green onions
1/3 c. lightly salted peanuts
14 oz. can of coconut milk
1/4 c. honey
2 tbsp. lime juice
3/4 c. creamy peanut butter
1/4 c. low sodium soy sauce
1 tbsp olive oil
2 tbsp rice wine vinegar
1 tsp sesame oil.
2 tbsp corn starch
salt & pepper
Drizzle olive oil over bottom of the slow cooker.
In a large gallon size ziptop bag, add the chicken, cornstarch, salt, and pepper. Seal the bag and toss to coat the chicken evenly.
Add the chicken to the crock-pot and distribute evenly.
In a medium size bowl, add coconut milk, peanut butter, soy sauce, honey, rice wine vinegar, lime juice, sesame oil, ginger, garlic, (maybe even a touch of cayenne powder, if you like spicy!) Whisk ingredients together.
Pour the mixture over the chicken evenly. If it looks like too much, don't worry about it because it will reduce down during the cooking process.
Cook on high for about 2 hours - or on low for 4 hours. Check on it after 90 minutes, especially since some crock pots cook faster than others.
Transfer the chicken to a plate using as much of the sauce as you prefer.
Garnish with peanuts, cilantro, green onion and serve immediately over rice!
