National Seafood Bisque Day!
Today is National Seafood Bisque Day!! This is just in time as the weather is getting colder and colder (in the mornings at least!) and bisques are great items to to accompany you and the family as you wrap up in blankets and stay nice and warm from the cold. Not familiar with seafood bisque? Here are five things to know about the it!

  1.  Bisque is a smooth, creamy, highly seasoned soup of French origin, classically based on a strained broth of crustaceans.
  2. It can be made from lobster, crab, shrimp or crawfish.
  3. It is thought the name is derived from Biscay, as in Bay of Biscay, but the crustaceans are certainly bis cuites“twice cooked” for they are first sautéed lightly in their shells, then simmered in wine and aromatic ingredients, before being strained, followed by the addition of cream.
  4. Bisque is a method of extracting every bit of flavor from imperfect crustaceans typically that have been broken (like our shrimp pieces!). In an authentic bisque, the shells are ground to a fine paste and added to thicken the soup.
  5.  Bisque is also sometimes used to refer to cream-based soups that do not contain seafood, in which the sometimes pre-cooked ingredients are pureed or processed in a food processor or a food mill.

Featured Recipe:
Crab and Shrimp Seafood Bisque

INGREDIENTS :
  • 3 tablespoons butter
  • 2 tablespoons chopped green onion
  • 2 tablespoons chopped celery
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon tomato paste
  • 1 cup heavy whipping cream
  • 8 ounces crab meat
  • 4 to 8 ounces small cooked shrimp or other seafood
  • 2 tablespoon sherry wine


DIRECTIONS:
  1. Melt the butter in a Dutch oven or large saucepan over medium-low heat; add the chopped green onion and celery. Saute, stirring, until tender.
  2. Blend the flour into the butter and vegetables until well incorporated. Continue cooking, stirring, for about 2 minutes.
  3. Warm the milk in another saucepan over medium heat.
  4. Slowly stir in the warmed milk and continue cooking and stirring until thickened.
  5. Add the freshly ground black pepper, tomato paste, and heavy cream. 
  6. If desired, puree the soup in a blender or food processor** at this point and then return it to the saucepan. 
  7. Stir in the crab, shrimp, and the sherry. Bring to a simmer.
  8. Serve hot.

**When you puree hot soup, don't fill the blender more than half full. If too full, the pressure from the steam can cause an explosion, forcing the top off of the blender. To avoid that, puree any hot liquids in small batches, and hold the blender cover on with a folded kitchen towel in hand.
