At 50% grenache, 30% syrah, and 20% mourvèdre, the 2010 Les Origines continues Grand Veneur's focus on the Chateauneuf-du-Pape's most classic varietals. Les Origines is built to mature, with the 2010 in particular needing some cellar time to develop into the full, floral, powerful but approachable gem it's made to be. If you're fans of the 2009 vintage, the closest comparison between the '09 and '10 in my mind are the superstar '00 and '01 vintages in Barolo. Both were outstanding, with the 2000 being just a tick more ripe and approachable at a younger age and the 2001s have a touch more classic structure and acidity.
With its combination of intense, ripe blue and blackberry flavors and herbal, floral aromatics, the 2010 Les Origines will bring joy to any Châteauneuf enthusiast. The 2010's firm tannins and acidity will find harmony with the fruits after a few years and will carry the wine for up to 15-20 years if you so desire. When the wine is ready to drink, simple dishes like lamb with rosemary, beef stews, or lightly seasoned game are a great way to allow the wine to strut its stuff. If you're feeling adventurous, the preponderance of grenache makes this Châteauneuf a versatile pairing for flavors found in Mediterranean dishes.

Fresh Summer Truffle (tuber aestivum)

These aromatic little delicacies, though not as intensely perfumed (or costly) as the famous black winter truffle, still offer plenty of exquisite truffle flavor that takes chicken, steak, potatoes and pasta from ordinary to extraordinary! Summer truffles (tuber aestivum) are available April through September.
Plucked from European markets at the height of their freshness, truffles are immediately shipped stateside for your enjoyment.
These beauties are similar in appearance to black winter truffles, but with a lighter color, crunchier texture and a more delicate, somewhat floral flavor that is best enjoyed raw. Try them grated over pasta, risotto, eggs or cheese dishes, or use them to finish recipes and sauces where only a short amount of cooking time is required.
Enhance the flavor of simply-seasoned grilled steaks by finishing them with a pat of butter topped with some freshly grated summer truffle. Shave fresh summer truffles over your favorite cream-sauce base ravioli or risotto. Roast a chicken, drizzle it with summer truffle sauce and serve with caramelized endives. Free-Range Wild Boar
This is our comfort food favorite. It's the perfect roast for small, intimate dinners among family and close friend! (Don't share this secret with just anyone.
The D'Artagnan Wild Boar Mini-Roast is made from the knuckle and is pre-tied to hold its shape and allow for even cooking temperature. Simply brown in a hot saut' pan with sliced garlic and rosemary to seal. Then place in the oven about 375F to finish the cooking or until internal temperature reaches 155-160F. Remove from oven and let rest before slicing. Serve either hot or cold. Great on sandwiches!
D'Artagnan Wild Boar come from a large free-range ranch outside of Quebec. The animals graze freely on nuts, acorns, and grasses while being supported at times of need by whole grains. You'll find the meat leaner than large-farm pork and richer in taste, but smooth and succulent in texture.

Fresh Moulard Duck Magret
Enjoy the best of both worlds with this succulent, best-selling duck breast!
This cross-breed of Muscovy and Pekin ducks boasts a delicious, juicy meat and a breast so big, it's often referred to as a duck steak.
The size of the Moulard Magret, which is twice as big as regular duck breast, is attributed to the fact that it comes from stock raised to produce foie gras and that the ducks are corn-fed several times daily in the three weeks before processing. The meat is then aged seven days on the bone to develop a juicy meat with rich flavor and firm texture.
Prepare this Magret as you would any red meat; it works well seared and roasted, grilled or sautéed. The outer skin should be scored well before cooking to render and crisp the fat.

Moulard ducks, a hybrid cross of a female Pekin and a male Muscovy duck, are famous for their natural tendency to gorge themselves in preparation for biannual migration. Taking advantage of this tendency, flocks are corn-fed several times daily in the three weeks just before processing to produce an enlarged liver known as foie gras. This foie gras is especially good for terrines because it releases relatively little fat. It's also very good seared.

Australian Grass Fed Lamb
Their Australian Lamb is the product of a clean, natural free-range environment.
Humanely raised on spacious pastures in Australia, D'Artagnan lamb is a cross between the Dorset, White Suffolk and Border Leicester-Merino breeds and tastes as elegant as its upbringing would suggest. Australia and New Zealand are famous for their quality lamb meat, and theirs is no exception: Lambs dine on clover and rye grasses, ensuring a sweet, mild flavor that is not at all gamy.
Cook slowly and serve rare to medium rare. Finish the sauce using pan drippings, demi-glace and truffle butter. Serve either hot or cold in the dining room or the backyard. A full bodied red wine will compliment the roast.

Frenched and Cap-Off Rack of Lamb

The "Frenched Cap Off" means that there is a little fat left on the bones, and the layer on the meat makes it ideal for roasting. This Frenched rack of lamb is incredibly easy to prepare. Rub with garlic, herbs & spices and olive oil, sear on the stovetop, and pop in the oven over tomatoes or potatoes, Provençal-style.
